A whole yellowtail that I received as a tax payment from my hometown. The wife processed it, so we paired this bottle with fresh sashimi. When we opened the bottle, the aroma was subdued. The aroma was subdued, and although it was not bothersome, there was a slight smell of ceme-dine. In the mouth, it has a sweetness of cotton candy and a clean aftertaste. Delicious!
First up is the spinach with millet vinegar. The sweet and sour taste of the millet vinegar turns the sake into a neat and dry taste.
The yellowtail belly with salt was so sweet and fatty. Then, take a sip from the boar's mouth. The sweetness increases, but the sharpness remains the same. It is too delicious!
If you eat it with soy sauce, it might kill the sweetness of the sashimi. It's not bad with sake, but the salt wins!
I think it was hard work to handle the 5.4 kg yellowtail, but I enjoyed both the sashimi and sake. Thank you to my wife.
