Sweetness, umami, and lactic acidity from 50% polished Kumamoto rice, Morinokuma-san. Not too sweet with a slight effervescence and a final sharpness.
Fruity juicy, not like the usual Eiko-Fuji, but delicious👍.

The name "Fuji" comes from the character for "glory," which was added to the original sake name "Fuji" when the company was first founded to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing without backs and sides.
