The flower-infused sake was too subtle, so I decided to open another bottle 😅 Bought this when I visited the crazy Salad Kan for the first time in a year 😊 Turns out Salad Kan also follows Ikoma Sake Shop's X account—they said it's edgy and interesting 🤣 This one I've been curious about for a while🦌 It's definitely sweet, but it also packs a punch with a solid alcohol kick and some spiciness. It might be one of my favorite types within the Haruka lineup. It's delicious, yet I rarely see it around—mystery🤔 But according to the official X comments, it's apparently not exclusive to specialty stores...

I tried Hana Yoi Shuzo's sake at the National Sake Fair, but their unpasteurized sake seemed rare, so I bought some. Purchased at a liquor store near Sennichimae. It's a junmai sake, but it's bag-hanging fermented—a luxurious sake. The rice is Hattan Nishiki. It's a crisp, dry sake, but the acidity is quite strong, making it feel easy to drink. The sharpness is intense, which I'm not a fan of 😿. Since it's bag-hanging, that might be unavoidable, but at around ¥2,400 for a 60% rice polishing ratio, it's quite pricey 💦.

I went to an antenna store in Aomori Iwate, and they had a lot of Mutsu Hachisen on display, but they were all ones I'd had before, so I bought a cheap bottle of Classic Nouveau, which I hadn't tasted yet. I haven't had Mutsu Otokoyama since I drank it with the back label when I went out for a drink a long time ago! It has a blueish nose with a slight bubbles and sweet acidity. Slightly effervescent, sweet and sour. The latter half is a little bitter and spicy. It's a raw sake, so you can taste the sweetness, but I guess it's basically a dry sake. It was delicious. I also bought Aoren apple juice which I learned from chika's post 😁. They had a lot of apple juice, but they only had Shiny and this was the only Aoren 😅. It was sweet, rich and delicious 😋. After drinking it, I remembered that I bought it somewhere long time ago and drank it 🤔.

It was crowded when I went to the Hankyu Brewery Festival, so I didn't stop by, but the next day I heard that it was sold out immediately. The one at Hankyu was labeled "unfiltered" and this one was not labeled "unfiltered. I hesitated and bought the one without the "unfiltered" label, which had a one month difference in date and a smaller stock. I think the unfiltered one said on the store pop-up that the rice and yeast were also from Yamagata and that it was all Yamagata. Basically, it has a sweet and fruity taste, but it has a little bit of a unique taste, like a little bit of huckleberry. It has a unique taste like a little bit of hackberry or something, and a little bit peculiar. It would be better if it wasn't so peculiar 🤔.

火入れの印象が良かったので生も飲んでみた。火入れよりはフレッシュ感あるけど特別甘味が増したとかフルーティーだとかは無い。大きく印象は変わらず優秀な食中酒に感じた 後半結構酸味を感じる。 新酒ではなく蔵に在庫が残ってたお酒って言ってたんだけど蔵熟成なのかな?少しだけ熟成感がある

Purchased with Sairai and Higashi Kaisen This is the first time for me to taste a draft sake of Yuzumi. It has a fresh taste, but it tastes a little light for a nama sake. It is a nama-shu, but it would be better to warm it up. The acidity is impressive anyway, but I personally think it's not as good as I'd like it cold 🤔. But on the second day, it started to have a caramel-like sweetness that I thought was pretty good.

I thought I asked for a hoken that said "fresh" in the back of the fridge, but what came out was fire-roasted😅. I've had the raw version before, so it's okay 🙄. It's a clear, dry, and strong dry sake. We started drinking at 3:00 p.m., but it was 5:30 p.m. before we knew it, and we had to leave the restaurant and say goodbye to Mr. and Mrs. Gura at Hankyu Umeda Station. It was a short but enjoyable time. Thank you very much 🙏.

I saw an off-menu Sentori in the back of the fridge, so I ordered it! The waiter told me that he could tell that there was a Sentori 😅. It was a very nice, slightly effervescent, not too sweet and dry tasting.

When Mr. Gura's wife ordered Kaze no Mori, the waitress said there were two kinds, Akitsuho 657 and this one, so I drank it because I hadn't had it before. I've only had regular Akitsuho, so it tasted fresh. It's sweet and tasty, but it has a beautiful taste, probably because it's polished differently. It didn't have the rummy taste like 657. I guess it's hard to judge Kaze no Mori without drinking it at home.

Next, I thought, "I haven't had a bottle of kafuda-zake lately," so here it is! It is a light and dry sake with a sake strength of +8, which is different from the image of a package of sake. There is no sweetness at all! Well, I don't think I'll choose this one if it tastes like this. I think I'll just stick with Hakkaisan😅.

Mr. Gura is in Kansai for his wife's homecoming, so we decided to have a drink with Mr. and Mrs. Gura and Mr. Yoohee until it was time to catch our flight. I'm sorry for announcing my participation on the day of the meeting even though I've heard about it since the end of the year. Mr. Yoohee found a place open from noon on New Year's and a little far from Umeda that looked empty and made a reservation for us 🙏. It's a stylish yakitori restaurant with a stone-top grill 🐔. We found Jyushiyo when we looked at the fridge, so we asked the price and ordered it with Yoohee 😅. I wonder if they always have something on the menu 🤔. This is the first time I've seen it. I was scared so I asked the price and then ordered 💦. Slightly effervescent, citrusy, sweet and delicious 😋.

I bought a nice one for New Year's 🥳. I saw Maru-san drinking it last year and thought I'd like to try it someday. I was surprised at the price though 😅 I was surprised at the price though 😅 I was saying "Why don't you put it in Icoma-san? I was surprised at the price 🤣. I really only needed to buy a bottle of Kitazuku 😅. I think it might be the most expensive sake I've ever bought 🤔. Beautiful and meh, classy. It's a little pineapple, a little understated in the usual Kibotsukuru way, but very tasty. Expensive but I'm glad I bought it. I think the Kifotsuru character comes out with the passage of time and temperature range.

Happy New Year 🙇. I wish you a happy new year 🎍. I drank yesterday but didn't make it 💦. We had a trouble with the tank in which we were preparing Junmai Daiginjyo Shasai no Yoake (dawn of Shasai), because we put steamed rice and brewing alcohol for 4-dan (70% milled rice ratio for regular sake) into the tank next to it. The brewer adjusted the taste with koji rice made with white malted rice to avoid the worst case scenario, and the sake was ready to be sold as a product. Since the brewing error involved about 90 koku of rice, it would have destroyed a small brewery. It seems they decided to reduce the number of Shasoi no Dawn from the original plan. This sake is only available for this occasion due to various reasons. Slightly fizzy and fruity sweetness. The acidity, which seems to come from white malted rice, is impressive. The overall taste is refreshing and easy to drink without being too sweet. When Icoma Brewery posted this sake on SNS, it got a million impressions and orders increased 🤔. Crazy Salad House also said they placed an order after seeing the post, and I thought the response from SNS was amazing😅.

New Year's Eve Shugetsu Tasting (2) Michinomukou Special Junmai This is a sparkling special junmai sake with secondary fermentation in the bottle. It seems to have been created as a project to protect the satoyama. It was shwashy and sweeter than expected. I like it a lot. I've never seen it before, but basically you can only buy it at the brewery or online store. Nigori Sake Nama Sake Active type of nama-zake. It's not spicy, but has a guttural taste. I think it is much sweeter than when I drank it before. Tokusen Hozenshu I thought it was a versatile type that can be drunk at room temperature or heated. The toji said that he only has one bottle, but if you want to heat it up, he recommends the kamisen. Special Junmai Hiyoroshi It is delicious at room temperature, but when heated up, the beautiful acidity comes out and it is really tasty. I was surprised at how much the taste changed! I was hesitant to choose the Junmai Daiginjo Nama Sake. It was the sake that surprised me the most with the difference in taste. If there is any left after the new year, I want some Michinomukou 🤔. New Year's Eve Shugetsu Tasting (1) I was going to go to Yizizishin Tasting on Monday, but I went out to do some shopping 😅 Mr. Maehara, the new toji (chief brewer) of Shuzuki, was there. Freshly squeezed raw sake! There is no description but it is a special honjozo. It has a dark taste, but also has acidity and sweetness. Shiboritate junmai namaishu This is a special junmai. I felt it was more robust than the first one I drank with aluzome. Shiboritate Junmai Nama Shuzake This is supposed to be a special honjozo too. It was said to be Nakakumi. It has an alcoholic taste, but the acidity is also impressive. It is easy to drink despite its high alcohol content. Junmai Daiginjo Nama Sake This is the first time they used No. 10 yeast. Until then, they used different yeasts such as No. 7 or No. 9 depending on the year. I have had several Junmai Daiginjos in the past, but this was the most delicious with the most robust flavor. It's a type of sake that can be drunk with food or on its own. From what I heard, it seemed to be a sake with more of the toji's character than other sakes. Except for the Junmai Daiginjo, I was impressed by the acidity of the above three sakes as a whole. I was so surprised that all the sakes were better than the previous year and the year before that I couldn't make a quick decision like before 💦. To be continued...

I bought Kibotsu before the year-end party at work, and on the way back I bought this sake along with Nagato Gorge in a tongue-tied state😅. It has a smooth mouthfeel. It has a good balance of sweet and spicy and fruity, but it's still a sake that you can drink lazily. Echizenmisaki is probably one of the best in terms of drinkability 🤔.

I was looking at Inui Sake Shop's Instagram and saw it on their Stories page! So I went to buy it as soon as I saw it! This was the first time I drank Tokaimori at home. It's very fruity and slightly effervescent. It has a sweet and floral, pineapple-like flavor, with a trace of bitterness at the end. It has a clear taste, not a strong taste. I wish it could be more popular. I got this the day before the Kobe year-end party, so I was really torn between Niyodogawa and Higashi Kaimori 🤔. I regret a little 😿. I think everyone likes the taste.

Purchased at a tasting just in time after the Kobe Year-End Party😅 Orikarami with No.9 yeast is a new product. It has spiciness, but it has a gorgeous and sour taste. I thought it would be popular with everyone because of its spicy but gentle taste. I really like the sourness. It tastes sweeter after a long time than when it is freshly opened.
