I've had 18 Mori in the past, but this is the first time I've had Tagaji's at home. I do drink Tagaji when I go out. The gasiness is strong. It has a good balance of sweet and spicy with a strong umami. The acidity in the second half leaves a lasting impression. I like it because it is a combination of modern and classic sake. When I drink it again, it has a strong sweetness, but it also has a lot of bitterness.

I bought it because Nemuchi and Ikoma Sake Shop raved about it 😁. I've been drinking Chiyoda Kura, but this is my first time to try Shiga Doukan. Icoma doesn't usually carry Shiga Doukan, but a sales person from Chiyoda Kura saw the rave reviews on SNS and contacted them to let them know that they could get it! It has a rich flavor. The sweetness is also strong, but not too sweet and not too spicy. Personally, I have an image of Tamaei as dry, but this is different! My mother, who drank it, immediately said it was delicious! The taste was beyond my imagination. It tastes a little bit like a light aged sake when the temperature goes up.

Purchased at Liquor House Rokko-michi store located under the JR elevated railway nearby after Koamichika where I purchased Fuyuki and Daisetsuken. A chain store with several stores in Kobe I've known the store for a long time and I've been there before, but I've never bought sake 😅. I think I bought juice and local sauce when I went there before 🤔. My impression this time was that there are a lot of Miyagi sake. Ichinokura, Katsuyama, Urakasumi, etc. I think they had Haginotsuru when I went there in the past 🤔. Personally, I was interested in Aizan from Niigata's Koshitsuka Sake Brewery. I haven't had Daikoku Masamune in a while. Low temperature aging with one fire. It has sweetness, but also umami and acidity. It is basically a food sake, but it seems to be versatile in temperature range, and I think it is an all-rounder type of sake that is easy to use. Daikoku Masamune's Junmai Ginjo-Unfiltered Nama-shu was my favorite fruity and sweet-tasting sake, but it is a pity that it is no longer available.

It is said to be a raw sake version of Junmai Ginjo D, which won a trophy at the IWC 2025. Nagano omachi is rare. He said this one, like Fuyuki, can only be ordered if you go to the prestigious sake tasting in Tokyo. The aroma is mild. It is juicy and sweet, but not too sweet. The second half has a bitterness that made me think it was Miyamanishiki😅. The higher the temperature, the sweeter and more delicious it becomes. I've had a lot of Taisetsukei's raw sake with a strong gassy taste, but this one didn't have any gassy feeling, so it felt fresh to me.

I happened to find a Kumamoto sake tasting and sale at a supermarket in the basement of Luxe Aire 😁. They were selling Zuitaka, Koro, Reizan, Chiyozonoen, and Kameyama, but only Zuitaka was available for tasting! Too bad they didn't have Bishonen, Tsuijun, or Hana no Kaori. There was a guy who looked like a brewery owner who said he came from Kumamoto, but I wonder if he was from Mizutaka 🤔. Kissho Zuizaka Ginjo Polishing ratio 58% Yamadanishiki/Hananishiki Sake degree +5 The label is cool. Modern type with gorgeous aroma. I don't think there are many people who drink it... Sake: Junmai Ginjo Polishing ratio 58%, Sake degree +5 I've had the unfiltered raw sake in the past, but the hi-ire version is quite dry... It's been about 6 years, so I'm not sure, but I remember the raw version was a bit sweeter 🤔... Nana Sour Sour Sake Polishing ratio 65%, Kumamoto yeast I was expecting the most since it is a sweet sake with a sake strength of -11, but it tasted a bit messy and was a little too subtle for me personally... I heard they have a draft of this one, so I'd like to try it if I have the chance. I think they sell the raw version at Keihan department store in Moriguchi 🤔. I was most impressed with Kissho Zuitaka, so I bought this one. I wish I could have tasted it! I wonder if I can drink Reizan at the brewer's festival next week.

I've seen Fukunotomo sake with an Akita dog label, but never this one. Fresh and slightly effervescent. A bit of tropical sweetness, but a bit bitter in the second half. I think they said you have to go to a tasting in Tokyo to order this sake 🤔. I think it's more bitter than when I just opened it...

After a first visit to a liquor store or a first visit to a department store to buy sake, we went to Ikoma. A customer gave him a bottle of sake😁. It's so golden in color after 3 years 😹. It seems to be aged at room temperature 😅. It's like the Notoji I drank the other day, but I think this one is more beautiful 🤔. I drank it cold, but I guess it's generally a heated type of sake, but I thought I'd rather drink it at room temperature. It's sweet but has a strong sense of maturity, so I guess it's not to everyone's taste 💦.

New brands handled by Icoma Sake Shop They are the first in Hyogo Prefecture to handle Kyo Hina. It's been a long time since I've seen Kyo Hina at a sake shop. I've only seen it at Yamanaka Sake Shop and Takimoto outside of Takashimaya tasting sales and sake festivals. Beautiful, juicy sweetness like a peach. Impressive firm sweetness and a sweet-sour or sour acidity. I thought it was peach at first, but after some time, it also feels lychee-like. It's not a modern type of sake, but it's a very sweet sake and I like it a lot 😋. I'm curious to know if Miyama also has a raw sake or an active nigori (nigori) 🧐.

It doesn't say, but it seems to be a hiya oroshi type sake. I was told there were only a few left, so I asked them to keep some for me 🙏. The top aroma is a bit fruity. First time in 4 years to drink at home, Nakajimaya. I was curious about this one since Ikoma Sake Shop was raving about it and Hirupeko-san was also drinking it. I got it just in time when there was only one bottle left 😁. Cold sake. It has a little yellow color. It has a sweet flavor like ripe bananas and a sense of maturity. The second half is a bit spicy, but the acidity seems to fade out with a strong impression. Maybe it would be better at room temperature.

The last one is Sentori, a limited edition of SAKELABO TOKYO! This restaurant seems to be connected with SakeLabo Tokyo, and they have a lot of rare sake! Hello World, please. They opened the sealed bottle. It's a bit sweet and tasty, but less acidic than regular Sengoku, so maybe it's easier to drink! I think I might even like it better than regular Sengoku! I wonder when I can go again. I forgot 😅 Tochigi Ai 🥰.

I've been drinking Kangiku since last year when I had a sake future at this store. I drank a lot of Sangiku at home the year before last, but I rarely go to a liquor store that carries it, so I doubt I'll have a chance to drink it again this year 🤔. Here is Denshogiku which I also drank at home the year before last. A little gassy. Fruity, juicy, sweet and delicious. I feel at ease with this kind of taste, it's like home. 🏠️ But I also think that it's important to have a good balance of these 🤔 in the fridge.

There was a sake I had never seen before, so I took a closer look and saw Kawanakajima Sparkling😳. It doesn't say it, but it seems it's a draft sake. I've never seen it in person before😅. I didn't know Kawanakajima Sparkling actually existed💦. It's a bit fizzy and bubbly. Low alcohol, light but not too light, exquisite. Fruity, very sweet and delicious 😋. I'm going to be pissed off that it's not a drink for the end of the day 😱.

Hakkaisan's Uonuma limited edition sake Apparently it is distributed outside of Uonuma only at restaurants. It's not sweet, but it's very tasty with a mildly sweet umami taste. I think it's one of the best Hakkaisan I've ever had 🤔. I think it goes well with sushi and seafood 🍣. It was a GASHIRA no NISHIKAI 😋!

I drank Choseomai at KITTE the other day, but this is my first time at Notoji. I didn't know there was a variety of rice called Chosei Mai😅 I thought it was a brand name like Niida rice. I heard that the rice grown in the Chousei area of Chiba is also called Chousei rice, which is a bit confusing 🙄. It has a golden color. Or maybe a little light brown😅. Smells like Shaoxing wine. It smells like aged sake, but it tastes beautiful and a little sweet. Better than the Chousei Mai I had the other day 😋. It's a bit of a mystery how it's aged so well even though it doesn't say it's an aged sake on the official website or on the liquor store's website 🤔.

I was told that there were two kinds of kotsuzumi, one of which I had already had, so I chose this one. Kotsutsumi is a local Hyogo sake, but I don't drink it often. It is a Junmai Daiginjo with a 50% rice polishing ratio. The rice is Gohyakumangoku. According to the official website, it is an autumn-only sake and is the only sake made using Kozutsumi's original brewing method. The name "Shirakura" means "white warehouse" in Japanese. Shirokura, which means "white warehouse" in Japanese. It tastes clean and refreshing, but has a lactic acid taste like yogurt. A little lackluster 🤔. Sake is a little expensive, about 3000 yen for a 4-pack and 4100 yen for a 1-bottle. Taste and price are... I've had kotsuzumi a few times but it's not for me 🙄. The kombujime (sea bream) was delicious 😋.

First time in over a year at a sushi restaurant I know it's good, but I don't drink it often. Ane-san has been drinking it recently. It's like a sake that's aged until autumn and then hiya oroshi. It's a hiyaoroshi type of sake. There seems to be another sake named hiyaoroshi. Fruity and sweet Mildly sweet and refreshing Sweet but not too sweet. I don't drink it often, but once again, Kame no Umi is delicious!
