National Sake Fair 2025 Day 2㊽ Chiba ⑤. Kamogawa City's Kameda Sake Brewery. I think they were at the Kintetsu Department Store Harukas event around 2019, but my memory might be wrong 🤔. Seems like I was buying Shounosato and Nenohi at that time😅 I remember being surprised to see a bottle of Kotobuki Mangame sitting in the kitchen of Mayumi Ono, who moved to Chiba a few years ago and used to do commercials for Acom and now does commercials for overpayment claims 🤣. Polishing ratio 33%, Special A grade Yamadanishiki from Yoshikawa, 17%, Sake meter degree +3 Sake price: 8,800 yen The most expensive sake I had at the Kokusyu Sake Fair after Sakunaguwashi 😳. Gorgeous, fruity, and a little spicy. It has a very good sake feel to it. I should have tasted it a little more 😅.

National Sake Fair 2025 Day 2 ㊼ Chiba Chiba ④ Yoshino Sake Brewery in Katsuura City Koshikoi, I know the name and have seen it sold, but this was my first time to drink it! 15.5 degrees, Chiba rice, Sake strength +2.1, 1,386 yen It is a classic but has a nice taste. It has a classic but nice flavor and is refreshing. A popular sake that has been enjoyed by the locals for a long time. They are too reluctant to bring "Kamisen" out of their various lineups.

National Sake Fair 2025 Day 2 ㊻ Chiba Chiba ③. Inahana Sake Brewery in Ichinomiya-cho They have a brand name "Inahana Masamune". The official website says it is the original brewery of flat rice polishing. I've seen this sake at Kobayashi Shoten in Osaka, and I think I've seen it at a liquor store in Moriguchi. Polishing ratio 60% (flat polished rice), rice used undisclosed, 15.5 degrees, Sake degree +1 M310 yeast, 1362 yen The aroma is like ripe fruit. The taste is refreshing and suitable for eating.

National Sake Fair 2025 Day 2㊺ Chiba 2 Mr. Nabe store in Kanzaki-cho I drink a lot of Fudo, but the guy at Katsushika recommended this sake that I like. How about it? Polishing ratio 50% Akita Sake Komachi 15.8 degrees Sake degree -4 1870 yen Fruity and well-balanced sake. I think it tastes richer than the price and is good value for money. By the way, this place was bought by a traditional brewery, right? I was surprised to see Fudo, but I wonder if it's not because of management problems, but because of lack of successors or something like that.

National Sake Fair 2025 Day 2㊹ Chiba ① Kubota Sake Brewery in Noda City Noda is associated with Kikkoman Katsushika = Katsushika? The brewery's staff was there. According to online information, the brewery's toji is in his early 30s, so I think he was probably the one who came. He said that the sake is not sold outside of the prefecture and is not well distributed even within Chiba Prefecture. Not only sake, but mirin (sweet sake with sweet sake flavor) is also famous. Polishing ratio 60%, domestic rice, 15.5 degrees, Sake degree +3, 1210 yen It is a classic sake, but has a moderate sweetness. It's the type of sake that should be drunk at room temperature or warmed up. As other reviewers wrote, it tastes like mirin (sweet cooking rice wine) for some reason. It's a little peculiar, but it's delicious! We were talking about how our brewery is located far away from the other breweries, and when we looked at the map of sake breweries posted around us, it was clear that we are in the same area as the other breweries, and that we are not in the same place as the others. Takara Shuzo Matsudo Factory Godo Shusei Tokyo Factory Nagareyama Kikkoman Nikka Whiskey Kashiwa Factory was on the list. Nagareyama Kikkoman manufactures Hokusai, a sake for cooking, and Nikka Whiskey Kashiwa factory manufactures Ichibanfuda, a shochu liqueur.

National Sake Fair 2025 Day 2㊸ Oita ⑤. Old Matsu Sake Brewery in Hita City Shochu is the main product here. Polishing ratio 60% Gohyakumangoku/Akebono 14%, Sake degree +1 Acidity 1.4, 1210 yen It is clear, light and dry, but also has a little sweetness and fruity taste. A beautiful sake. I imagined it to be more classic, but it was a little different. If you ask me if it's modern, I'd say it's more on the classic side. I thought Oita has a high level of quality. Someone said that the level of Oita's shochu culture may have been raised due to competition with shochu 🤔. There are many breweries that have the same toji (master brewer) for both sake and shochu, so I personally thought that they are feeding back their skills and experience.

bouken-san, excuse me here as well. I have not seen Kaorucho in Fukuoka either. It takes a little over an hour to get to the brewery from Fukuoka, so I haven't seen it except when I bought it at the brewery... 🍶 It is a historical brewery, but it is also a little modern and tasty.

National Sake Fair 2025 Day 2㊵ Oita ② Sato Sake Brewery in Takeda City Senbazuru, I've seen it before at Yodobashi 🤔. I think it was also on the stock list of a liquor store in Moriguchi that carries only rare brands in Kansai. But I've never bought it, so this is my first time to drink it. Polishing ratio 60%, Hachitan-Nishiki 16-17%, Sake degree +7, Acidity 1.8 1,700 yen It is gorgeous but dry and mature. I thought it was great that the Kyushu breweries were drinking Gura-san at a high rate 😆.

National Sake Fair 2025 Day 2㊴ Oita ① Bungo Meisho in Saiki City! I drank Junmai Ginjo last year, but I think there is only one shop in Kansai that handles it, and it is a sake that is rarely seen. Polishing ratio 50%, Yamadanishiki from Saiki City, 15 degrees, Sake degree +1, Acidity 1.6 Abelia yeast, 2,400 yen Fruity and refreshing, partly due to the flower yeast. It has a strong Jun Dai character rather than flower yeast character.

I wonder if they call it Kinran because they have Fujimusume in Kochi. There is no website and not much information about the brewery. Polishing ratio 50% Yamadanishiki from Fukuoka Prefecture? 15%, price unknown I can't find any other sake with the same label when I searched... I wonder if this is a fire-aged version of the raw sake that Mr. Matsuchiyo was drinking? They had Junmai Daiginjo and Daiginjo with the same label. Well, it's sweet and rich, gorgeous and elegant, but it tastes a little strange.

National Sake Fair 2025 Day 2 ㊲ Fukuoka ② Hayashi Ryuhei Sake Brewery in Miyako Town Kyushu Chrysanthemum? I thought for a moment, but it was Zanshin which I drank last year😅. Polishing ratio 45%, Yamadanishiki from Minamiaso 15.5 degrees, Sake degree +6, Acidity 1.7 3,100 yen It tastes clean but graceful. A little nutty Bitter with a bit of nuttiness. According to honda's post, Kitahara Hakushu's sister married into the Kikubijin Brewery, so the brewery has a connection with Kitahara Hakushu. Polishing ratio 35%, Yamadanishiki 16%, 4,400 yen Tsukuei" is read as "Tsukubae". It is light, fruity, and has a beautiful taste, but it tastes like an off-flavor.

National Sake Fair 2025 Day 2 ㉝ Kumamoto ③. Kumamoto Prefectural Sake Brewing Institute in Chuo-ku, Kumamoto City. The representative brand of this brewery is "Kororo" and it is the originator of the No. 9 yeast. The new brand of Koroh is now available in Kansai. It is now available in the Kansai region, but there are still very few. Polishing ratio 45%, Yamadanishiki 16%, Kumamoto yeast KA-4 2,500 yen KA-4 is an in-house yeast. Gorgeous, a little gassy, sweet and juicy. I was wondering if I would be able to drink it after my first serving, but they opened a new one for me and I was able to drink it with a sizzle 😁. The guy beside me was so happy that he could drink it freshly opened thanks to his brother 😆. Hana-no-Kou was sold out for the tasting! I should have bought it since it was only available in Kumamoto and it was fresh sake 😿. For some reason, I drank only sparkling sake at the Kumamoto booth😅.

National Sake Fair 2025 Day 2 ㉜ Kumamoto 2 Yamamura Sake Brewery in Takamorimachi I've never seen this sake in a liquor store, and I've only had it once in the past when I went out for a drink. Polishing ratio undisclosed Hananishiki 13%, 2,200 yen Sparkling sake with secondary fermentation in the bottle. There are four different labels, but the contents are the same. It tastes sweet, sparkling, and modern. But I think 2200 yen is a bit expensive. It's low alcohol, it will be empty in no time, and it's cosy 😅. I wish there was a Sandesi.

National Sake Fair 2025 Day 2 ㉛ Kumamoto ① Kameman Sake Brewery in Tsunaki Town. They've had red rice sake in the past. When I went to the Kumamoto booth, everyone was offering a cup of sake to be poured, so I took advantage of it without knowing what it was 😁. Alcohol 6 degrees, liqueur 330ml 660yen Sugar, acidity, and flavoring are used. It says that it is a carbonated version of the standard nigori sake, so I guess the rice is the same as the nigori sake and it is made with Hananishiki and Akimasari? It looks like ramune or banana. It was like juice🧃. I heard that Kameman's dry sake was good, but when I went there, it was already gone... I'm looking forward to the future of Kamehameha, as it seems that a special Kamehameha store has opened in the Kansai region...

National Sake Fair 2025 Day 2 ㉚ Gifu ⑥ Oda Sake Brewery in Takayama City I remember drinking vacuum-packed sake at the Japanese Sake Festival. Annual shipment is 700 koku. They say they are the originator of many Onikoroshi sake breweries in Japan. I think the real brand name is Hida-boast. It's under the umbrella of Hidagura Corporation, a sake brewery revitalization company. Polishing ratio 58%, Hidahomare 18-19%, Sake degree +10, Acidity 1.9 Amino acidity 1.9, 901 yeast, 1754 yen. It tasted sharp and dry 😅.
