This is the first draft version of this sake that I have seen in stores in a while. Upon opening the bottle, the gorgeous ginjo aroma was wonderful. In the mouth, it is sweet and sour! It has a strong flavor, but the aftertaste is refreshing. The baby leaf salad with figs and squeaky cheese tastes sweet, but the sake does not lose its flavor, and the deliciousness remains intact. The refreshing taste makes it easy to drink. When paired with sweet shrimp sashimi, the sweetness of the sake remains the same, but the taste of the shrimp is not disturbed. The bitterness of the soup also brings out the flavor of the sake. It goes well with the sake. The main dish was grilled yellowfin tuna kama with black pepper. There is no reason why fish, salt, and black pepper should not go well with sake. I couldn't stop drinking.

Refreshing aroma, rich sweetness and flavor. But it is not overdone and is easy to drink.
It is a dangerous sake that you can easily drink too much of.
Serve with sashimi as a side dish.
Eikohuji Survival
The name "Survival" comes from the sake rice "Tamanae" used in the brewery.
It was named after the image of "power to survive (=Survival)" from the rare sake rice that is still active in Yamagata Prefecture and was the fourth registered sake rice in the prefecture.
The name comes from the character for "glory" added to the initial sake name "Fuji" with a wish for prosperity. It is also said that the symmetrical character "Eiko-Fuji" represents the brewery's philosophy of "sake brewing with no two sides of the same coin.
I drank the next one after the Schwarzwald Low-Al.

The sweetness is the main taste, and the sourness is just an afterthought.
The sake degree of -64 is not bad... Thanks to the light alcohol content of 10 degrees, it is easy to drink... but the sweetness makes it rather tiring to drink, lol.
However, I'm not sure if it can be called sake or not, it's kind of a neo-nihon-shu.
