I woke up this morning and went sightseeing to Tsurugajo Castle.
Then, for a special appointment, we went to the holy place of Aizu, Sota Watanabe Shoten ❗️
We arrived a little earlier than the appointed time.
As I was sobbing, Mr. Muro appeared ❗️
I recognized him immediately😄.
We exchanged greetings and went inside the store.
We had a great sake conversation as we looked at the sake lined up in the fridge ✨.
Mr. Muro, a detailed ❗️ was very modest in his daily reviews 😁.
He taught me a lot about Fukushima sake 😆.
The sake conversation was going on and on, but Mr. Muro had to go home for work.
It was only about 30 minutes but it was a very intense time 🤗.
After seeing Muro-san off, we bought some sake 😤.
I couldn't miss Muro's recommendation ✨.
After returning home, we opened the bottle 🍶.
When I opened the lid, I could smell the Daishichi aroma 😙.
"Mhmm, is it heavy?" But it was a short time before I felt the round flavor in my mouth.
There seems to be no sweetness or sourness 🤔.
It goes down your throat quickly, just like its name 🤔.

We stopped by Suehiro Sake Brewery on our brewery tour and bought some sake 🍶 and jelly 🤩.
First of all, a puchi puchi 🫧.
It starts with bitterness and gradually sweetens up.
A nice, clean, flattering taste 😚.
Next is the jelly 🤍.
Plum? Tangerine? Sweet like 🤔.
Hard to compare as I can hardly taste the acidity 😓.
It's listed as having alcohol in it, but maybe because I was drunk, it was no different than regular jelly 😆.

It was nighttime 🌙🦉.
I decided to go out for a quick drink as the bars were starting to open soon 😁.
I strolled around the city, but since it was the weekend, many of the restaurants were booked up. In the midst of all this, I found a brightly lit standing bar on a street corner 👀.
It is "Konbee Ginza 9-chome".
It is open and you can see the inside of the restaurant from the outside, making it easy to enter even if it is your first time 😄.

Almost no sweetness. The umami of the rice stands out. Exemplary dryness with good sharpness 😎.
Aizu Junmai Sake
Clean sweetness and umami of rice, with a delayed acidity. It seems to go well with meat dishes 🍖.
Suehiro Yamahai Junmai
Slightly sweet and tasty rice flavor, with delayed acidity. It is not so sour that you feel sourness. The sweetness is also refreshing 😙.

A long time ago, a wholesaler in Nagareyama called Akimoto owned the Edogawa Masamune trademark. They used to make sake under that trademark with the local Kubota Sake Brewery, which also made packaged sake. When Kubota stopped making packaged sake, a pot store, also connected to the company, started making packaged sake instead under the two✌️."

At the Yamagata Sake Fair 2025, I asked the president of the brewery 👴🏻 how to purchase the sake, and after returning home, I inquired & ordered from "Yamagata Asano Shoten" and after a period of waiting for inventory adjustment, I was able to purchase the sake 🤗.
I was so excited when the bottle arrived 🥹.
I heard that it was a sake to be entered in a sake competition ✨...my expectations were high 😤.
Now, the sake 🍶.
Immediately after opening the bottle, you can smell the gorgeous 🌸 and sweet aroma of the unrefined sake, which is typical of daiginjo-style sake. ☺️
The mouthfeel is like clean water 😙.
It makes you say "woohee~🤭" 😆.
It is light and easy to drink for its 18% alcohol content.
From the middle stage, a light and clean sweetness gradually spreads in the mouth, and a "Ohhhh!
A little bitterness comes in at the end and adds to the lingering satisfaction 😙.

The taste is within the range of Sairai, so it's not a disappointment, but I think it's a little dryer than Sairai 🤔.

Echigo Yuzawa Station "Sushi Honjin Dining" 🤗
We had sushi and a glass of Tsururei.
It has a light sweetness that is typical of Tsururei and goes down smoothly 😚.
The salted fish as a side dish gives it a slightly sweet taste 🤔.
The sushi 🍣 is soft and delicious 😋.
It sweetens, tightens, and resets the fishy smell according to the sushi ingredients.
Tsururei is as good as it gets 🤗.

It's called Aizan ❤️ but the sweetness is quite restrained, light and elegant 😊.
There is a bit of bitterness in the kirei.
Is it more of a dry strain? 🤔
It is clean and light to drink.
I see that even Aizan ❤️ can brew sake that is not sweet 🧐.
