It has been aged for one year.
Hmmm? The roughness of 7 years is gone, and it has become calm and mellow.
It is totally delicious.
However, I'm not sure if the taste of the 7 year old is different from the 6 year old, or if it has more punch 😅.

We found two bottles, one from 2025 and the other from 2025, side by side in the refrigerator at the liquor store we visited last month.
We took both bottles with us. We opened the bottles at the same time and compared them.
The first one was from July 2025. It is rough and goes down the throat. I remembered Shinanotsuru as being more fruity, but it was a fairly healthy sake.
Nama sake bought over a year ago.
Mellow aroma of ripe fruit.
Sinful, rich sweetness clings to the tongue

Lightly sweet. It is a beautiful and smooth sweetness.

Today we have a Jungin Unfiltered Nama Sake Tasai ❗️ from Shinanotsuru in Komagatake, Nagano Prefecture.
The aroma is a fresh, fruity scent of ginjo❗️As you take a sip, you get a tingling raw texture on the tongue followed by the fresh sweetness of the ginjo and a fruity aroma that leaves your nose❗️❗️ and a slight astringency on the tongue❗️Good sake❤️
