This Junmai Ginjo-shu, the first bottling, is an unfiltered, unfiltered, raw sake with a hint of oriki. The mellow, gorgeous aroma and pineapple-like flavor are very appealing, but the bitterness in the aftertaste keeps the taste tight and refreshing.

Yesterday, on my weekday off, I went to Ginza and stopped by Tatsumi Seishudo in Higashi-Ginza.
I went there for Hirotogawa Nigori, but they did not have it in stock, so I got Shinanotsuru Hatsu Shibori, which I was interested in.
There was also a bottle of Gantaku, but it looked like it was fire-aged, so we passed on it.
The Hatsushibori had an elegant pear sweetness with a slight bitterness, and I felt it had great potential.
I was not able to check how it tasted the next day and ended up with a 4-goupe bottle of it. 😅
I've heard that Takeshon-san has been praising Shinanotsuru's Stubborn for a long time, and Manachie-san says it's a very good sake, and this is also a good thing about Sake-no-wa, I recommend and post good sake without discovery.
