☀️ This is Hourai nigori sake that I bought from Marukin Shoten in Hida Takayama 🤍. ... "nigori" or "doburoku" 😅. When I saw it in the store, it looked like it was covered with white powder 🤍. Now, open the bottle 🍶. First of all, it has a great rice flavor 🌾. It's too smooth and it's like drinkable yogurt❓It's like the undiluted solution of Fruche ⁉️. You don't feel the alcohol due to the sweetness and flavor of the rice, but it actually has 17 degrees ⤴️ Knowing that there is also alcohol added makes it seem rather punchy 👊. It might be a rather dangerous drink🍶😅. This is the end of the Hida Takayama section 👋

☀️ Masamune hunters go today🍶. This is the Hida Jishukagura Honten. I was feeling the atmosphere that Masamune might be there, and when I explored the store, there it was 👀. I picked up the bottle with a little leap... it was light 🫥. Empty bottles for display 🫙❗️ sold out‼️ Shocked and dizzy😵‍💫 ...but I am a Masamune hunter. I can't stay discouraged😠. I ask the clerk what's in stock. Hiro: "I am a Masamune hunter. Do you have any luscious sake Masamune? 😣" Clerk "I'll check the stock 😉" ...the clerk is on the phone... Clerk "We have it, but it won't arrive at the store until tomorrow or later". Hiro: "Then please send it to me when it arrives 😆" Thanks to the divine response of the clerk, I was able to purchase it safely 😊. I opened the bottle the day it arrived 🍶. Looking at the manual 📃, I thought it would be interesting to compare the drinks 🙄. First of all, right after opening the bottle. The sweetness is crisp and sweet like apple🍎 and cherry🍒. Next, according to the instructions, turn it over 3 times and wait 3 minutes: 🕰️ Which...eek❗️😳 The sourness has disappeared and the peachy sweetness stands out and is much mellower. The ginjo aroma is also welling up like blue fruit. There was a taste change after a day, but to have a taste change after 3 minutes...it was a shocking experience😳 Nice Masamune👍

☀️ Continued by Hirase Sake Brewery 🤗. Masamune hunters found another "Masamune" 👀. We found a wooden sign hanging in front of the brewery that said "Nadaryu Masamune" 🤩. I looked it up after I left and found on the brewery's website that it was brewed around 1915. I can't seem to find it in my searches, too maniacal😅. Now, here is the sake 🍶. ⚫︎ Kusudama Junmai Daiginjo Yamadanishiki It's a standard spec. It has a mild sweetness and a bitter and astringent aftertaste. It has a mellow ginjo aroma and is right in the middle 🎯 of everything. After all, Yamada-Nishiki is a sake rice that can be the axis of your taste buds 🌾. ⚫︎400 year anniversary sake Unlike Yamadanishiki, this one has a calm and reserved taste. The sweetness and restrained umami create a smooth and soft sweetness 😚. ⚫︎ fall-up Modest sweetness and a little bitterness. Naturally, it is less fresh, but the taste of autumn sake is thick and deep 🍂. Thanks to the fixed price for the tasting, we were able to drink at a leisurely pace, and it was a great sake brewery 🥰. Furthermore, I could feel the history of the brewery and Masamune, so it was a very satisfying visit to the brewery. ☺️

☀️ This is the last sake brewery. This is Hirase Sake Brewery, the brewery farthest from Takayama Station. Here you can drink as much as you want for 1,000 yen for 30 minutes 😍. You pour your own sake from the bottles lined up in the fridge 🍶. As you may have noticed from the store sign, Kusudama originally had "Masamune" attached to it. Masamune Hunter's research had informed us that it had become "Kusudama" due to the unification of brands, but since it was a good opportunity, we asked the brewery staff about it. I asked the brewery staff about it, and they told me that they had stopped using "Masamune" and kept only the trade name due to the unification of brands. Another Masamune has disappeared🥲. ⚫︎ Kusudama Junmai Daiginjo Slightly sweet and umami. It has a clean aroma, soft and gentle mouthfeel, and the Junmai Daiginjo sake character is permeating every corner of the bottle 🤗. ⚫︎Kusudama Junmai Nama It has a soft mouthfeel and freshness on the throat 😚. ⚫︎Kusudama Handmade Junmai It has a slightly rough and hard mouthfeel, but it has the qualities that only junmai sake has 😙. ☀️ The next sake brewery is Funasaka Sake Brewery. Here you start by purchasing a boar cup and one medal from the gacha-gacha (200 yen) 🎰. You can also purchase additional medals🏅. You can sample a wide variety of sakes, but we started with the ones with interesting labels 😆. ⚫︎ samurai Well, it's eye-catching 😅. It tastes like a ripe apple 🍎 with sweetness and sourness. I'd say the acidity is subdued 🤔. It has a hint of ginjo aroma and is a light type of sake 🍶. And it seems to be popular among foreign tourists 😆. But I feel like asking if this taste is really "samurai" 🤨. I think it's a little too sweet. I'd like to see the toji's face 🙄. ⚫︎ toji Seiji Hiraoka and then I saw a label that looked like that 👀. Probably this guy. This photo shows his samurai spirit in the foreground 🥸. As for the sake, it too is sweet 😊. It starts to get a bit more refreshing in the middle with a nice umami aftertaste 😙. The ginjo aroma is also rich and shows a certain skill ☺️ Despite the solemn label, it was a modern sake 🤗. ☀️ I continue to stay at Harada Brewery: 🧘‍♂️ ⚫︎ mature-gin It's a walnut type of sweet taste 😚. It's sweet on the throat, but you can feel the pressure pushing in on the aftertaste 😎. I looked closely and it's 18 degrees alcohol 😅. ⚫︎ hiyaoroshi It's not the same as the impression of hiyaoroshi, but it's refreshing 😙. I felt the ripe gin was more hiyaoroshi-ish. Maybe I shouldn't have drunk them in the right order😅. ⚫︎ Junmai No pictures available. It has a slight sweetness and umami of walnut type, but more of a dry taste 😙. Now that we were getting drunk, we decided to take an interval for lunch. I thought soba noodles would be good, so I went into "Menjyo Nagase" 🚶. Tempura soba for 1,980 yen 🍤. I ordered it because it was a travel price 😆. The first thing that came out was a cup of barley tea 😊 which tasted so sweet 😊. The soba noodles had a wonderful aroma and were fresh ✨. Tempura was crispy on the outside and soft inside 😋. The shiso leaves are crispy and feel good 🥰. Tempura with salt is more delicious ⤴️ Salt is also good on soba noodles. They say salt has hamekabu in it 🤔. Soba water is like sludgy doburoku🤍. I had the first bowl with sauce and the second bowl with salt 😋. Soba, Tempura and Sobayu all satisfied 😋. ⭐️

☀️ The next sake brewery is Harada Sake Brewery. Here the tasting is all you can drink for 450 yen 😳 Super generous 😍. You are given a sake cup and pour from a bottle in the fridge by self-service and you can take the cup home with you 🤗. Great fat 😍😍. The bottles in the fridge are sweating and the labels are shifting as everyone grabs them😅. Be careful not to slip while pouring 🤣. ⚫︎ yamaguruma hana yeast brewery It reads "Sansha". It is sweet and delicious and really gorgeous🌸. The sweetness is clear and nice and easy to drink 😚. ⚫︎ dry This is clearly dry and no sweetness 😎. It mixes with bitterness in the middle. Royal dry 👑. ⚫︎ pure pure rice No photo available. This one was also dry and refreshing. I was surprised to see two opposite types of sake, a sweet and a dry one 😳. The brewery can make various types of sake, so I think they have a high level of skill, but I have not seen them in Tokyo. Is the distribution volume small? 🤔 Anyway, I met a good sake brewery 🤗.

☀️ Leaving Marukin Shoten, we moved on to the nearest sake brewery. This is Hirata Sake Brewery. This is a common type of tasting machine where you buy a medal to taste the sake 😁. We had a welcome drink (sake🍶) at the counter and bought a medal🤩. ⚫︎Shoryu no Mai Third photo. A bit of sweet smell 😚. Slightly classical. Lingering bitterness and astringency. ⚫︎ hida-no-hana This is a refreshing sweet type. Classic taste is mixed in from the aftertaste 🧐. ⚫︎Neibel Fourth photo. I saw the words "limited edition" so I tasted it. It is soft, mellow and viscous sweetness 😊. I exercise self-control not to drink too much here and head to the next brewery. Cooler heads 😤. I don't think I'm drunk yet 😁.

The bottles were taken from the bottles lined up at the store 📸. Now, as for the taste, it is sweet like a soft milk caramel 😚. But it goes down your throat easily, so you don't feel any clinginess 😙. It is easy to drink without bitterness or astringency, but after swallowing it, I felt a slight alcohol feeling 🤔. The alcohol feeling at the end makes it feel like a Gifu sake🍶🤗. The Marukin Shoten card is the first card you purchase when tasting and is charged for 1,000 yen. I was confused because it was my first time tasting with a card system, but I understood after carefully reading the explanation at the entrance 😄. Nice Masamune👍

☀️ I went to Hida Takayama 🚃. This place is a "Sake Brewery Wonderland" with sake breweries clustered in the old streets 😁. After arriving, we first went to "Marukin Shoten" before going to the sake brewery. Here you can sample sake🍶 from all over Japan for 1,000 yen. However, we decided that we should drink Gifu's sake when we came to Gifu, so we got it from Tenryo 😋. The first glass 🍶Tenryo Daiginjo Slightly sweet and refreshing. It has a persistent sweetness like watermelon🍉 or pear🍐. The ginjo aroma is refreshing and easy to drink. Second glass 🍶Okinokoroshi Junmai Daiginjo It is slightly amber 🟡. It comes in classically, and the sweetness covered with sourness like an apple🍎 comes out jingly. I had an image of Onikiri as a packaged sake, but I thought it was cosy to have this taste in pure rice 😙. It's a good start to have such a good liquor store: ⤴️

☀️ I was curious about this when I saw your post on Salmon Wawa and bought it 🥳. When I tried to open the bottle I felt an aura that it was going to spew. It's dangerous ⚠️ Once again, I opened the bottle using the "spew blocking technique" that I learned from the master of the bar 😁. If I had been careless when I opened the bottle, I would have been crushed 😅. I opened the bottle safely and here is the sake 🍶. It is white like a sports drink 🤍 with rice grains floating in it 🌾. The umami is strong. Strong bitterness in the aftertaste😝. The gasiness is strong and makes my mouth buzz🫧. It's quite a hard punching style 👊. After the second day, the gassiness subsides and the sweetness and umami become more pronounced and mellow 🤗.
