☀️ 1600 check in ✅. Kiriban is a normal looking but surprisingly expensive "In-House Tada Yamanishiki" ✨. There was a purple label that I often see in the fridge of a liquor store 🟣. I picked it up and thought, "I'll have a glass of Mimuro Sugi once in a while..." and then I noticed that it said in small letters, "Jikkouden Yamanishiki". If this is the Yamadanishiki grown at the foot of Mt. I looked it up and bingo! I looked it up and bingo 🎯. Mmmm 🤭. And the price is... 5500 yen😯. Gunnu😵‍💫 But I'm a "Mimuro Mania". Anyone who doesn't buy it here doesn't deserve to call himself a mania 🫵. I inspired myself that way and bought it 🙄. Now, let's open the bottle🤗. The sweet and gentle aroma wafts in like a fresh breeze. The aroma raised my expectations for the sake: ⤴️ On the palate, it is clear and sweet like Mimuro Cedar ☺️ Clear? Dawn? You can feel the sparkling clear water ✨. It reminded me of the purity of Mt. Miwa and the shrine I saw beyond that torii ⛩️🤗 Imanishi Sake Brewery's brewing philosophy is "pure, righteous, sake brewing". This is the world that Miwa sake and Mimuro cedar are trying to express 😌. As a "pure, righteous, Mimuro maniac", I will continue to drink Miwa's sake 🤗.

☀️ Bottled in January 2025 🤔. I've let the raw sake sit for a long time 🤗. It's a mild, tender sweetness with a stickiness that's not unlike Jikin ☺️ It's like honey 🍯. Wow, it's very sweet 😅 It doesn't have the clear throat feeling that is typical of Jikin. I tried it as a trial, but it was a great change in range that didn't meet my "I want to drink Jikin" feeling 😂.

☀️ A clean balance with less sweetness and acidity. The umami is outstanding 😋. And when paired with squid sashimi 🦑, the sweetness comes out a bit and it feels moist, sweet and delicious 🤔. There is a sense of umami spreading to the aftertaste, and the squid 🦑 was enhanced 🦑: ⤴️

☀️ There was a line of Kamonishiki with some kind of expensive atmosphere 😲. If it's a glass of store-bought sake, I can manage... let's drink it 🍶. It has a sweetness and aroma similar to the usual sake 😚. But the sweetness is refreshing and clean to the aftertaste 😙. I can't help but to keep sipping it 😅. Kamo Nishiki really doesn't betray us 🥰.

☀️ Yonokotori, which was also raised by Ahuio. There was also Kalora with it. I've never had both so I got them 🤗. ⚫︎Karora They use a type of koji mold called kumonosukabi 🤔. When they say "kabi", it makes me go "mmmm ❗️" 😅. Now, as for the taste, it has a lemon-like sourness and a slight sweetness 🍋. A little bit of the usual wooden vat aroma. It's more refreshing than the usual Shinsei 😁. ⚫︎Yonono Kotori The bottle is thicker 🧐. I didn't know they had such a size 🧐. As for the taste, it's less sweet than the Yonokotori, and the carbonation is stronger and shuffling 🫧. The strength of the carbonation distracted me and I thought I couldn't face the sake 🙄. ...and I'm going to comment on one thing 😆.

☀️ This sake has been hard to find since I had it at an event in Nagano 😐. But I came across it when I was in Osaka for the Masamune Hunt ✨. Opened the bottle after a short viewing period 🍶. Light minerality 🤔. Very slight acidity and even more slight sweetness. It is sweet like cherries 🍒. At the end, there is a hackberry-like ginjo aroma that comes through to the nose with a crisp, clear and refined impression 🤗.

☀️ Masamune hunters go today 🍶. The original family can't be outdone 💕 At a yakitori restaurant, we will have Yamagata Masamune, a representative of the orthodox Masamune 😋. It has a good balance of banana🍌-like sweetness and rice flavor. While the flavor is satisfying and lasting, it goes down your throat clean and easily 💕. ☀️ Echino Yukitsubaki is well-known, but we have chosen "Yukitsubaki". I wonder if they inherited the jinx of "Hiragana ni Hazurenai nashi" ❣️ And then there is the much-talked-about "Koshitanrei" 🌾. I repeat, it is not "super pale" 🙄. The flavor of the rice is very strong 🌾. Where's the "light" flavor? I'm not sure 🙄. It has a simple taste with a thin citrusy sweetness. I thought it would be more light but it was surprisingly robust 🤗.
