☀️ I heard they are the brewer of Jikin 😄 Well, I'll buy it 😆. Fresh sweetness and clear acidity. Stoic sweetness soaks through: ☺️ It doesn't have the deep sweetness of Jikin, but I felt the aesthetics of straight drinking 😎. As the temperature rises, the sweetness increases and the mouthfeel feels softer. It is different from Jikin, but I was impressed by the wonderful expression 🙏.

☀️ Happy New Year 🌅. The first bottle of the new year is Tsururei. I managed to buy it after hustling liquor stores at the end of the year 😆. Last year it was a library picture, this year it's a portrait 🧐. Now, let's open the bottle 🍶. First of all, just sake 🍶. Sweetness and sourness. The sweetness is a quiet sweetness reminiscent of cherry 🍒. The acidity is stronger than the sweetness. Hmmm, more acidity than last year 🤔. Smell is mature and doesn't interfere with food. ☺️ I will eat it with Osechi dishes😄. It becomes dry and tight when combined with kamaboko (fish cake). When combined with kazuzu, it becomes mellow with sweetness. It is a great balance. The balance of the Tsururei YEARS BOTTOLE. I will buy it again this year 💪.

A bottle using Musashino Distillery's "Spine Ball" for the preparation.  The mouthfeel was a little tangy, yet sweet like muscat and lychee, and very easy to drink 🍶.

Opened a bottle of No.6 Xmas-type that I got in a New Year's goody bag this year🎄.  The sizzling sensation remains from the first sip to the end of the bottle 🍾.  It is slightly sweet and feels more like a Western sake than a Japanese sake.

☀️ The sake rice is Bizen Omachi🌾. I bought the label, but since it's Ni-Hare, I have faith that it won't slip up 😤. Sweet and sour like an apple, with a distinct acidity 🤔. The palate feels natural thanks to the underlying sweetness 🤭. I just thought ...... that the strength of the flavor is like Omachi 🙄. Slightly carbonated, pleasantly aromatic and mellow😊. Great balance in the flavor accents👍

☀️ Who called me, I'm Bai Sailai 🤍. It is light and cloudy, with rice grains visible🌾. On the palate, first sourness and sweetness, then a little bitterness after a delay. When you include it, the sweetness and umami of the rice swells up in your mouth😊. Here it comes, rice sweetness & umami from sourness 😆. It is too good to be just this.... I'll pair it with the shortcake 🍰 that T.KISO recommended. By the way, it's from Fujiya ❗️ The sweetness is taken away by the cake, the bitterness disappears, and the sourness is more apparent 😎. Oh wow, it turned out to be quite sharp 🧐. Next I will try the cheesecake 🧀 which was not recommended. Of course, it's a Fujii: ‼️ I think it has a slight alcohol taste 🙄... but it's stronger and more acidic and has more impact 👊. This packs too much of a punch 😱. Pairing is difficult 😓. Oh, I was so engrossed in eating that I forgot to take a picture of the cake 😇

☀️ Let's ride the big wave 🌊🏄‍♂️ New Sentori, here we go: ❗️ I only bought retro because of my fridge 🤣. The label seems to be a remake of the 7th generation Sentori label 🧐. Now for the taste... I can see small bubbles at the bottom of the boar cup 🫧. But I don't feel any carbonation. On the palate, it is sweet and sour like apricots🤭. The sourness is subdued and the sweetness is brought forward. The sweetness envelops the sourness, and it can be drunk calmly and gentlemanly without being turned away by the acidity 😌. Nevertheless, the acidity is well perceived and it goes down the throat well. The perfect balance of acidity gives it a sense of depth 😳. I would like to drink this one modern and classic too 🤩. As the endorsement says, I hope this will be "the dawn of a new era" and boost the sake industry 🤗.

Was it last year? I was impressed by the first bottle of kafuda-shu I've had in a long time. There are too many different lots to keep track of, so it's a strange series of delicious but infrequent drinks. I was told that Asahi rice tends to produce the kind of light sake that sushi restaurants like. Is it originally rice rice? The aroma of muscat is a bit strong, but when the temperature rises, the aroma of muscat is quite refreshing. The weak sweetness and umami, and the acidity, which is filled with citrus-like bitterness such as lime, create a three-dimensional effect. There is not much volume. Will it expand? The moment you think it is going to expand, it disappears. It is like a good love affair. It is smart and sharp. But the interesting thing is that it has a surprising "flavor. It is a quite interesting and tasty sake that you can enjoy developing because of its minerality despite its lightness. Modern dry taste is exactly what it is! I think it is suitable for pairing with Japanese food when well chilled.

Yamagata Masamune has recently become a favorite. It is a fall sake, and is a standard? The first is Omachi, and the second is Namaishime no Omachi. The aroma is a mixture of rum and alcohol with a little sweetness. When you drink it, you may think it is dry. It has a classical aroma. The sweet umami flavor swells up from there, and it is extremely tasty! A wonderful food sake that is sweet but not sugary. The use of the traditional sake yeast yeast yeast method is well balanced and beautiful, with a creamy richness and refreshing aroma. It has a mellowness that is typical of autumn sake and has a good flavor profile. It is a wonderful sake that can be drunk endlessly with a meal. Because of this, it is an excellent match for autumn flavors. Because of its umami, it goes well with soy sauce or miso seasoning rather than saltiness! I paired it with a peach and mozzarella salad as an appetizer! LOL!

This is Sara. I was planning to go to Matsuzaki Kawagoe sometime in the future, but I had to go to Kawagoe, so I went there for the first time. The Nakafuku main store is closer to my house, but... The taste is elegant and sweet! I want to drink it regularly. I heard it is ranked No. 2 in Saitama on some website. I hope it won't be as hard to find as Hanerbi.

Overall 10 (out of 10) We completed our move today😃. But it's only about a 5 minute walk away 😅. The sake I pulled out to celebrate is from Aichi prefecture where Pekho and I have our parents' home, Kuheiji🍶. It's delicious 😋. Cutting sweet-umami type👍 The main taste is sweet and umami, but it also has an astringent and spicy taste that is not so obvious but works well in the background so that it doesn't end there 👍👍. I had it chilled. The aroma I felt was  -Aroma: Ginjo aroma👍  -Aroma: Slightly astringent taste on the nose. Taste sensation The higher the number, the stronger the taste (5 is the maximum).  -Spiciness: 1 at the beginning → 1 in the aftertaste  -Sweetness: 3 at the beginning → 2 in the aftertaste  -Sourness: 0 at the beginning → 0 in the aftertaste  -Bitterness: 0 at the beginning → 1 in the aftertaste  -Astringency: 0 at the beginning → 1 lingering 1  -Rice flavor: 4 at the beginning → 3 in the aftertaste Mouthfeel I felt】→3 Smaller number = light Bigger number = thicker (5 is the maximum)

Two summer sakes and Mitsuo Yamakawa's Yamagata Masamune times were my personal dots. The autumn sake has a good reputation, so we will have it with high expectations. It has a sweet aroma. It is as sweet as ever even when you swallow it. Although it is sweeter than the standard Omachi, the sweetness is just right and supports the umami, creating a very good balance. The ratio of sweetness to umami is about 7:3. It has a freshness and freshness as if it were a new sake, but with a pleasant acidity and soft sake quality, it is not too spicy and has a mellow mouthfeel, giving it a good autumnal sake taste. But what is interesting is that it is not just a soft, modern sake. It has a classical atmosphere with a strong alcoholic character, which is the quality of Yamagata Masamune. Overall, it has a fresh, light fruitiness, somewhat like a pear. This does not change even after a few days from the first day. It also has aromas of apple and pineapple. We chose a standard Omachi for the comparison, but this one has a distinct sweetness and plenty of flavor. The juiciness from the acidity and sourness of the other one? I enjoyed both as moist and umami sake! It was a good sake that had both autumn-agari-like and un-autumn-agari-like elements.
