Delicious!
The umami, sourness, and sweetness come with a bang, and surprisingly, everyone leaves after the first round, leaving only a slight spiciness in the aftertaste.
It tastes like a model of umami-guchi.
The acidity is strong for a Shiga sake.
I don't think it goes well with sashimi, but I think it can be served by itself or with a wide range of simmered and grilled dishes.
I just don't know where to go to drink it 😂.
Shiga Local Sake Festival in Otsu 202310
Masumoto Tohei Sake Brewery / "Ususakura" "Omi Toobei" Higashiomi City, Shiga Prefecture
The brewery brews a small amount of sake with less than 200 koku of stone.
The difference between "Ususakura" and "Omi Tobei" is that "Omi Tobei" is all pure rice and unfiltered raw sake.
No, this is also an amazing brewery 😳I instantly became a fan of my favorite sake✨.
Usuzakura Junmai Sake.
I thought this one had a very high degree of perfection. It is neither clear nor fruity, but has a great balance between miscellaneous tastes and brings out a dusty sweetness and umami.
Usuzakura Junmai Ginjo
It has a more refreshing umami than Junmai, and has a little bit of a Japanese sake feel.
Hana to Neko Junmai Hi-iri
I don't know the specs, but it has a full-bodied sweetness, with a bit of bitterness at the end.
I don't know the specs, but it has a sweetness with a richness and a bit of bitterness at the end.
I don't remember if it was Nakatori. It is thick, fruity, and fresh. But it has a sake feel to it.
Omi Tohei Yamadanishiki Junmai Ginjyo Nama-nara Sake] Super fruity, fresh, and sweet without any cloying taste. Very tasty.
Forgot to take a picture💦.
I'd like to try more varieties more carefully.
This is the third one I drank during my vacation.
As the cute and friendly label suggests, it tasted fresh and light, and I gulped it down.
It was an easy drink for anyone.
GINBUKIYUKI Polishing ratio 55
Petit petit. Sweetness changes to bitterness and a slightly habitual ginjo aroma. When you drink it slowly, it has a cemedine type of alu feeling. It has a sharpness, so it is best to drink it with a meal.
Aroma: weak ginjo aroma
Sweetness with umami and characteristic bitterness on the palate
Bitter taste skips acidity.
The aftertaste is pungent and sharp.
The sharpness from the bitterness is
Sake strength -5?
I had a good impression of the hiyaoroshi version of this one, so I bought the raw version. The rice used is Ginfuki. The aroma is mild. It's clean and slightly sweet. After that, the ginjo aroma comes in like a chase. I think the hiyaoroshi version was more fruity and tasty.
To be honest, I don't really like it. Just because a sake is good when it's hired doesn't mean it's good when it's raw...
