Continued from the previous issue, This is Tomikyunishiki. This is a Banshu Namahashiro of Fukyu-Nishiki. I think I was told at the brewery that this sake is aged for 7 years. I was curious about it at the New Sake Festival, but didn't take it home, I was curious about it at the New Sake Festival, but didn't take it home with me! It has a yellowish hue. Started at room temperature. The top aroma is gently tinged with rice, mushrooms, caramel, and maybe a hint of spiciness. From the mild mouthfeel, you can taste the soft rice and matured flavor flowing lightly. The aftertaste is light and refreshing, and the lingering aroma of maturity that lingers is irresistible, inviting you to have another cup. When heated up, it feels like drinking white water, and you can drink it indefinitely. I drank it with the cookies I had on hand 🍪✨. To the loss of food waste..., I mean, seriously, it's a loss. But I got it at a good price. Thanks to the supermarket 🙏. I haven't had Tomikunishiki since my go-around sometime ago. That day taught me how to make a good sake 🤔. I'm glad I took the plunge and went to Tomikunishiki: ‼️
