This time it is Akebono night. It is called Ariiso Akebono in Toyama Prefecture. It is the only sake brewery in Himi City, Toyama Prefecture that was damaged by the Noto earthquake, and is the result of the brewer's desire to go back to the basics and make sake once again. And yet, The label is too pop! I'm kind of moeing a gap. It is served cold. The color is slightly yellowish green. The top aroma is of ripe bananas with a smoky astringent taste. From the light and refreshing mouthfeel, The smoky astringency that flows through the entire palate has a slight banana and slightly hard rice flavor. The taste is a mixture of these two flavors, which creates a delicious taste that makes you want to drink another cup. It is better served cold to expand the umami. When I attended a meeting of Ariiso Akebono, Mr. Takazawa spoke passionately about it, He said, "I want to make a sake that goes well with the food culture of Himi, where fresh seafood is abundant! The flavor conveys his love for Himi, which is rich in fresh seafood. And just in time! We were also lucky enough to be served with a gorgeous tagged zuwai crab from Hokuriku 🤣. Yoo-hoo🦀✨🍶.
