Delicious! The umami, sourness, and sweetness come with a bang, and surprisingly, everyone leaves after the first round, leaving only a slight spiciness in the aftertaste. It tastes like a model of umami-guchi. The acidity is strong for a Shiga sake. I don't think it goes well with sashimi, but I think it can be served by itself or with a wide range of simmered and grilled dishes. I just don't know where to go to drink it 😂.

I had a good impression of the hiyaoroshi version of this one, so I bought the raw version. The rice used is Ginfuki. The aroma is mild. It's clean and slightly sweet. After that, the ginjo aroma comes in like a chase. I think the hiyaoroshi version was more fruity and tasty. To be honest, I don't really like it. Just because a sake is good when it's hired doesn't mean it's good when it's raw...
