Sake Souzake. The aroma has a hint of sweetness, and the hint of fragrance is stronger. The taste is sweet and chili at first, with the umami coming in later. The bitterness and sharpness come at the end. Orthodox? I feel that the brewing water must be delicious! It's amazing how refreshing it is even though it's unfiltered.

Aged for half a year, it has a plump, slightly mellow taste derived from "Omachi rice produced in Okayama Prefecture" and is very drinkable. The aroma is reminiscent of ripe fruit. It has a slightly pungent bitterness that converges slightly, but it seems to go well with meat dishes.

Comparison of Omachi and Aizan with different sake rice. The Omachi was a little more fruity. Both have a 75% rice polishing ratio, so the overall taste was a little heavier. Still, the hiyaoroshi (cold sake) made it a little mellower.

You can also enjoy the change of temperature from cold to room temperature.
It is a sake to be enjoyed slowly on an autumn evening.
