This is the first Ariiso, a 50% polished sake with a good umami taste from the palate including a sense of clarity. Although it is jun-dai, it is not flashy, and although it has a slightly raw feel, it is not rough and has a calm taste, making it a good sake to drink during meals.
It has been a long time since I have had a cold sake that is unexpected in a good sense.

Tart, delicious, juicy and sweet. Pungent and rice flavor, voluminous in taste. The sweet and spicy taste has a slightly bitter aftertaste that is refreshing.
When eaten with boiled peanuts, the sweetness and flavor of peanuts increases and becomes more delicious. Western sweets are also tasty as they complement each other. Delicious!

When drunk chilled, it is dry with little character, but as the temperature rises, it has a rich soft umami flavor. A slight bitterness comes later. It has a classical sake quality.

AKEBONO LIGHT
I thought it would be sour and acidic, but it was quite refreshing, a bit like a white wine, which I don't like.
I drank Akebono Hatsuarashi, a junmai sake from a brewery in Toyama that was hit by the Noto Peninsula earthquake, to support the victims, and it was also quite refreshing. I wonder if it is made to go well with seafood.

I think it is very dry among the sake made with white malted rice.
Citrus aroma and acidity. It was like a dry white wine. Almost no sweetness, so it is not my favorite type.
