I used only ayu (sweetfish) for this dish. I also served bonito and Spanish mackerel tataki with a lot of myoga. It has a slightly high alcohol content and sweetness for a Niigata sake, so it went well with the ayu fish, bonito and Spanish mackerel. It was a good evening drink.

Purchased in January at Kinase, a local sake brewery in Mito. I chose this brand for the Ibaraki local sake category. I was really torn between Watanabune and this one, which I had never had before. When I checked the aroma, I found a sour, vinegar-like smell... Looking at the label, we discovered that it had been bottled more than half a year. I didn't realize how much a draft sake deteriorates after half a year, even if the bottle is unopened... The taste is also undeniably deteriorated, but it is drinkable without any problems. It has a slight melon-like flavor with almost no sweetness. It is easy to drink as it is refreshing and sharp. I drank it much more smoothly. There is no doubt that the original is delicious. I want to revisit Matsumori for this...! But I didn't know it smelled like this. I learned a lot.

Good evening, it's Shamrock, a parallel world from Manazuru in our first series ☘️☘️☘️. Not a Yotsuba, but I'm opening this bottle to pray for Japan's 🇯🇵 soccer team to win tonight✨ It has a sweetness that is typical of rice, lactic yogurt and acidity, and is delicious 🐴🐴🐴🐴, but it has a high alcohol spiciness on the back end that makes it very drinkable. I had a puku puku brew the other day. I think it is similar to the junmai sake I drank the other day from Pukupuku Brewing (that one is Koshihikari) 🤗. The last sake we had at Kyoto Stand Kiyo Kiyo was "Toyoyo Junmai Dry Musou" by Mukai Shuzo, also from the Tango region. The rough and powerful label may represent the fishing scene in this area. When you put it in your mouth, you can feel the umami flavor and the aroma of rice is crisp and full. Even though it is called "Dry Musou", it has a hint of sweetness, which makes it a delicious cup. It has been a long time since I have had a good drink, and the best part of drinking outside by myself is that I can drink slowly while considering what to drink and what snacks to go with it, while keeping an eye on my pocketbook. Tonight's sake is a Shiraito Brewer's Nigori sake from the famous Shiraito Shuzo, which I had the pleasure of meeting at the brewery during my trip to Fukuoka in late May. When we visited the brewery, the proprietress and her little son were very attentive to us, and we were very grateful for the free tasting, which they usually don't do 😊 We bought a bottle of one of our favorites, so we're going to open it now 🙌! The rice polishing ratio is not stated, but I think it is more than 70% polished. The aroma has a soft lactic acid nuance that is not typical of sake. The taste is easy to drink with a slight sweetness of rice in the supernatant and umami flavor 😋 It becomes completely cloudy when mixed with a significant amount of lees, but it has a smooth mouthfeel and is more delicious 😋😋😋😋😋.
