It has a fruity aroma of white peaches and a juicy, robust flavor.
Recently, there have been a lot of new sake nigori and shuwashu type sake, so this is a modern but robust type of sake. It was delicious!

I bought this sake as a souvenir from Fukuoka and drank about half of it on the bullet train.
The lightness typical of low-alcoholic sake and the elegant aroma of Yamadanishiki coexist, and the refreshing fruity aroma and clear but firm acidity are impressive. This may be a characteristic of Fukuoka Yume Yeast, which is famous for producing malic acid.
It is designed to be light and easy to drink rather than full of flavor. As the temperature rises, it becomes more sweet and acidic.

The same fruity aroma, soft sweetness and rice flavor spreads with fruity acidity and a little gas, and finishes with a slight bitterness.
Fruity, fresh and refreshing, it goes well with meals and is of course delicious on its own!
It goes well with Japanese dishes such as the homemade yuba and crab salad at Chef Maru's restaurant, where the owner has a unique personality and is always eager to be photographed for some reason.

Aroma and flavor that is what you would expect from old time sake. A little fruity, with a lingering aftertaste. A little modernity added to the image of what you would expect from a Honjozo sake.
I guess this sake is in the dry category.
It has enough umami but does not give the impression of being sweet, and the tangy dry taste continues right after the umami.
I would like to have something to accompany it.
