This afternoon I'm 🍶2 with a friend from college that I haven't seen in a super long time. Tokugawa is a 1.5 gou (1,380 yen) style restaurant. For this class of sake 👍. This was my first time to drink Hiwada. It is a delicious light cloudy sake with a ginjo aroma and sweet and spicy taste. 😋😋😋😋 Both Shinten and Abe are modern dry. They are light and were well received by my friends. After all, it is fun to talk with friends who know each other well. I wonder if they have a bottle of Abe for restaurants, please sell it to me too!

The label is the brewery I went to in the summer! When I was shown around the brewery for a bit, I remember they said they were not making sake at the moment and were letting it mature in tanks. It has a dry, umami acidity, sweetness and spiciness that is closer to the mid-palate than Jindai, and a harmonious mouthfeel with a sense of umami. 😋😋😋😋 It is an autumn sake! No gassiness. Yamagata Masamune Sake Mirai, the quintessential Yamagata Ginjo Sake👏👏👏. Refreshing and gorgeous ginjo aroma. The top nose has a grape nuance. There is a strong sense of gas. Fresh, with a balance of umami and acidity with a little bitterness. It is too easy to drink with a clear, fine-bodied, highly polished body! It has a medium sweetness and spiciness. If you drink it for the first time and are blindfolded and told it's a Jyushiro, you'll think it's a Jyushiro. I wonder if it's because Sake Mirai can produce a sense of high purity that you wouldn't think it was 50 polished rice. Oh, no! The one I bought in Aomori is now sold at Koyama Shoten! But it's so good and so cheap that I'm going to buy it again. I learned during my trip to Aomori this summer that Nishida Shuzo has a brand called Kikusen. It has a refreshing ginjo aroma on the nose. It is a very clear, light and dry sake with a sense of umami. Slightly gassy. Good cold sake. 😋😋😋😋 The sweetness is on the dry side. The quality of Nishida Sake Brewery is second to none! I'll copy and paste my own impression. 2600 yen without tax, supposedly the regular price but 100 yen more than Asamushi Onsen in Aomori ❓❓

My own souvenir last 🍶 of my summer trip to Aomori Akita When the bottle is opened, there is a slight feeling of gas. The aroma is a gorgeous ginjo aroma with a hint of maturity. It has a nice aroma and is deliciously spicy. It is delicious with a little sourness and matured taste. 😋😋😋😋 The sweetness and spiciness are slightly sweet. It has a nice spiciness and a high alcohol content. I thought it was a "raw sake but can be kept at room temperature", but the bottle says it needs to be kept cool 😅. I have only a few souvenirs left from my trip to Akita and Aomori. I bought a bottle of sake at Suzuki Sake Brewery, where a lady who may be the next head of the brewery poured a tasting glass for me. It has a heady aroma that foreshadows sourness. No ginjo aroma. It is easy to drink and has a slightly acidic flavor. 😋😋😋😋 No gasiness. The first sip is a very beautiful sake. Because of the lack of ginjo aroma, it does not fight with the fishy smell of dried or shiny fish, and it flows well with the food. It is quite excellent as a food sake that doesn't fight with food. 👏👏👏👏 Unkunsho>The rice used for this sake is "Menkoina" from the Kamishiro district of Tazawako Town. Perhaps because of the high geothermal heat, this district is said to be an exceptionally snow-free place, and the snow melts quickly, producing good quality rice. 2,200 yen without tax

Sake that won the highest distinction at the Omachi Summit 2025. Fruity ginjo aroma. Sweetness and a slightly thin body with a beautifully delicious acidity. Slight bitterness. After checking out of the inn, I was moving the car to the entrance of the inn to load our luggage when I was surprised 😳. My wife said, "They sell tasake at the store across the street from the inn! What? What store across the street? If you ask me, it's a store. With all due respect, I did not recognize it when I walked the dog last night or this morning. I entered the store and asked the elderly male owner, who showed me to the refrigerator, where I found a bottle of Tasake Tokusyu and a bottle of Kikusen Ginkan behind the melon. I wanted to buy both, but I had already bought two bottles of other famous sake and a four-pack yesterday, and I had a four-pack of Tasake left over, so I bought the Kikusen, which I had never had before. After leaving the store, I looked in all directions to check the name of the store to see if it was open to the public, but there was no sign. I guess this is what happens when you live in a place where sake culture is deeply rooted! I was surprised to see the name of the restaurant on Google Maps, A fresh ginjo aroma on the nose. Delicious classic junginshu🍶. I bought it at Sekitaro Shoten in Asamushi Onsen, Aomori City, because it is a brand sold only at five stores in Aomori City. The color is quite dark for a 50 polished sake. It has a gorgeous ginjo aroma with a sour and sweet top note. Classic body with acidity and sweetness, easy to drink. 😋😋😋😋 The sweetness and spiciness is medium. No gasiness. It is so easy to drink that one wonders if it is really 17% alcohol. The balance is something I've never had before with any sake I've had in my hand. But it is delicious. 3800 yen including tax

Delicious modern fresh balanced sake🍶. Misato Nishiki from Misato Town, Akita Prefecture, brewed with Misato Town's fresh water, and labeled exclusively for the sake shop next door to the Kuribayashi Brewery. Gorgeous ginjo aroma. The aroma and body are balanced with a delicious acidity and bitterness. It is fresh with a strong gaseous taste. The sweetness and spiciness are all well balanced and delicious. 😋😋😋😋 The first tank was filled in January and the second tank was filled in August, so the flavor will become more familiar and more to your liking. The liquor store next to the Kuribayashi Brewery seems to be very fond of Shinmasa and has a lot of empty Shinmasa bottles neatly displayed in a large space. But it seems that no one can buy it at first glance. And although the love for sake is strong, the customer service is quite habitual, so it is recommended that you enter the store with an open mind after reading reviews on the Internet beforehand. 3,100 yen without tax, great cospa👍.

This sake is brewed by Dewazuru's Akita Seishu and is only available in Honshu at the Tsujimura Sake Shop in Aomori City. It is an active light nigori (nigori is a light nigori with a light nigori taste). The screw cap was opened and closed a couple of times and the bottle was opened. It has a nigori and a fresh and gorgeous ginjo aroma. The fine-bodied balance of umami acidity and bitterness and the umami of the unrefined sake make it a perfect match for 😋😋😋😋 The sweetness is slightly dry. I think I went to Daisen City where Akita Seishu is located. This rice was served in a Tsugaru beadlo sake cup I bought on my trip, thinking Hokkaido -> Akita -> Aomori -> Akita -> Tokyo -> in my stomach. After returning home, I could not figure out the relationship between Akita Seishu, Dewazuru Shuzo, and the Dewazuru label. Are they merged as companies? Or are they brewing jointly due to the disaster? 2000 yen without tax

Since we were traveling by car, we were happy to buy a total of 6.8 liters of sake as souvenirs 😊. On the last day of our family trip, we were able to stop by the Kuribayashi Brewery in Haruka 😊. The Kuribayashi Brewery grows and brews Misato Nishiki, which originated in Misato Town, Akita Prefecture. We bought this Junmai Daiginjo specs which are specific to the Misato Nishiki rice fields in the prefecture! This was my first taste of Harukasumi. After returning home, I took some of the brewing water from the entrance of the brewery and used it as a tap water 🍶. The aroma is a gorgeous ginjo aroma. The aroma has a gorgeous ginjo aroma, and while it is fire-aged, there is a definite gaseous feeling. Beautiful sake with a good balance of umami acidity and bitterness. 😋😋😋😋 The sweetness and spiciness are medium. The first day it is fresh and hard with a strong sense of gas; the second day it is slightly gassy with a good balance of umami, acidity, and bitterness. I have never purchased this wine before, but it is very good. 1,900 yen without tax

Family trip today to Kakunodate's samurai house street and Lake Tazawa. On our second night in Daisen City, which is famous for its sake, we finally made it to the Suzuki Sake Brewery in Hidariyoshi in the evening. At the direct sales counter, we were politely served by the next female owner of the brewery, and were allowed to sample some of their sake. I wanted a lot of things, but I bought a bottle of Tokujun Issho and a cup of sake. We had dinner at the same inn as yesterday. Today we had Kariho Sandesi Jungin 🍶. It has a fresh ginjo aroma, very beautiful light dry taste with a little acidity body, and it's so refreshing and delicious. 😋😋😋😋 This is the first Kariho I've ever had. Jungin 55 polished. I asked which one was the one from yesterday, which I felt had a matured taste, and they told me it was the January 2025 BY. Oh wow. This is certainly fresh 😊. 1200 yen including tax Tomorrow is the last day of our trip, we are going home 🚗.

The restaurant's customer service is with the manager today as employees return home for the Obon holiday. The manager is involved, Osageko. My wife and I each received one glass of this sake as a service. The sake is called "sagekko" and the polite word "o" is added to the name. This sake is made by the Asamai Sake Brewery in Amano-do. It was served cold. It has a nice aroma and is deliciously spicy. A little sourness and matured taste. It has a delicious spiciness and a high alcohol content. It is a raw sake but can be stored at room temperature👍. It is sold at the souvenir corner of the inn and at the sake brewery. I will probably buy some as souvenirs since I will be staying at this inn for 2 nights 🍶.
