It tasted sour and sweet like sake made with white malted rice. It tasted like sweet white wine. Kaiun always has a great balance of sweetness, umami, and bitterness, but this one was a bit adventurous. It was very different from the taste I imagined.

It also has a softness that is typical of hiyaoroshi.
