A sake brewery located on the approach to Mount Kompira in Udon Prefecture.
It is a sacred sake.
It is not junmai (pure rice) sake, but that is also a good thing.
It is indeed a daiginjo.
The color of the bottle is amber, but the contents are sake.
It is delicious.
My wife's mother who lives in Takamatsu sometimes sends us Kinryo.
This time it was the first time for us to try the Usu Nigori "Mato".
Tasted the top clear layer first 😋.
Soft sweetness, a bit apple? (According to the label on the back 😆)
Next, mix it with the oli that has accumulated at the bottom,
The taste becomes a little stronger?
A little sourness, slight bitterness.
More grapefruit than apple? The sourness and bitterness are not that strong,
But it also tastes sweeter? It seems to be sweeter.
This is a soft and delicious sake.
I feel like everyone in my family gives me sake. Thank you 🙇.
They have a bottle at my oldest son's place and one at my daughter's place and they are stanning for me 🥰.
Good morning, ma-ki-😊Are you back on your feet?
I'm glad to hear you say so, but they might think "if only we gave them alcohol" 🤣.
I think Kinryo has a lot of sweetness from the rice and is very refreshing 😋.
A faint scent of honey.
Not as sweet as expected. Dry taste.
It has acidity, a structured flavor, and the richness of rice.
Slightly ripe aroma.
It is delicious.
They said they bought this wine to pair with bouillabaisse, but it is no longer in season,
But it was said that the season was over.
It goes well with dark flavors such as vinegared firefly squid with vinegared miso and gari herring.
Taste level 4/5
Kinryo's Junmai-shu made with olive yeast. It has a fresh aroma like muscat. It has an astringent and acidic taste like white wine. It is delicious, but it does not have much of a sake flavor, so there are different tastes. Personally, I prefer something with more sake-like characteristics, so I don't think I will be repeating this for a while.
