I went into Secoma to get today's sake and bought the most expensive cold 300ml and opened it.
Sweet, weak acid bitter.
Kagawa Prefecture does not have many check-ins, but will have more next year.
Rice: 100% Ootose
Rice polishing ratio 58
Alcohol 15-16%.
It was delicious.
This bottle is brewed by a sake brewery in the neighborhood of Kompirazan.
It has a gorgeous ginjo aroma, a rather restrained sweetness, and a clean and crisp finish.
The crisp Seto Inland Sea climate can be felt in the flavor, making it a perfect match for Kagawa's famous chicken on the bone and fresh fish!
Sweet and sour aroma like apple vinegar.
Lightly ripe graininess on the palate.
The sweetness is felt for a moment,
Then, acidity, which is typical of Yamahai, is sharp.
After that comes umami, and finally bitterness.
The acidity gives it a refreshing feeling, but the lingering aftertaste is a little fragrant and long.
It is a light umami type.
Taste 3.5/5
Second cup. I have not had much Kagawa sake. I had had Kinryo once. It was super dry. This time, it was a completely different taste. It is mildly sweet and delicious. You can feel the aroma of rice. The aftertaste is a little tight. Delicious.
Drinks last night
Wine seemed to go well with this restaurant.
But since we were in Kagawa, we had sake!
I ordered hot sake, but it was Kinryo.
It was slightly sweet and easy to drink.
Next time, I would like to try it at room temperature.
