Ginbuki.
It is lightly nigori (lightly cloudy) but not too much so, apparently.
The umami gradually swells and explodes from the first to the middle part of the bottle.
The entrance is a thick pulpy aroma reminiscent of bananas and ripe melons.
In the mouth, the dry acidity wraps around the side of the tongue immediately after the thick rice flavor is felt.
It has a profound taste even though it is more like a "dry" wine, but it is not heavy on the palate because of the freshness of the wine.
While most of the nama-shu released at this time of year are intentionally light "summer sake," I am relieved to find a nama-shu full of classical elements such as this.
Once again, Shiga's sake is of a very high quality ✨✨It's delicious 🍶.
I think it goes well with all kinds of food, no matter what you eat.
Sake I had been curious about in Shiga Prefecture
I bought a bottle of ICHIHAKU that I had been curious about because of the label and the impact of the name.
The label on the back says that it is aged for two years.
I wanted to try it heated up with my favorite beans, which I can only eat from now on, but I drank it all cold 😢.

This sake was served while waiting in line outside to enter the restaurant.
Compared to the second sake I had at ICHIHAKO, "Nama-Hashimoto Junmai Usu-Nigori Nama-Shu," it seems a little gentler and mellower in feel 😋.
This completes the list of ICHIHAKO sakes served at the restaurant 🥰 They were all really delicious 🥳.

This is the fifth ICHIHAKO sake.
Unlike the previous Ichihiro's, the label does not list the sake rice name, sake degree, acidity, or yeast information 🤗.
I guess it means that you should drink it peacefully without worrying about the details.... After having had yawaragi no mizu, the label and the taste of the sake are strangely calming 😋.

The first kind of ICHIHAKO.
The system was to enter the restaurant only when the number of people in the restaurant decreased, so we were able to taste multiple kinds of food slowly until we left the restaurant 🥰.
Also, the smoked herring that was served to taste went well with it.
All of the drinks were refreshing and delicious, but I couldn't leave individual notes😅.
