At home. Nara Sake without permission, 12th stage ~‼️ Kubo Honke, a long-established sake brewery in Uda City, Nara Prefecture ~ ‼️ Hatsukasumi and this Soriryu are famous brands. The baseball club team that my sons took care of when they were in junior high school was located in Uda, and this is a nostalgic place where we used to go every weekend. We used to pass by the brewery we visited this time, but this is the first time we visited there. It is called "Sake Brewery Street," but it is really a quiet street. And the taste of the sake.... There is not much aroma, and although you can feel the alcohol in your mouth, the dryness is not so high and the sake is easy to drink. I imagined it would be a dry sake for the experts because it is from a long-established sake brewery, but to my surprise, it is moderately drunk and has a refreshing taste. It is not flashy, but it is a good sake. ‼️

Unexpectedly, it was aged for 7 years. I ordered it to go with sashimi, but I was surprised to find that the ripe aroma was just for aroma, and it went surprisingly well with the sashimi. However, it is not enough for those who want a mature sake, and the ripe aroma is a little too much for those who want a refreshing sake. I guess Sairyu is not for me after all.

☀️ It doesn't say it on the front label, but if you read the back, it's "hiyaoroshi" 🧐. It has a light sweetness and a bit of bitterness. A little bit of umami is hidden. After a quick sip, the scallops with butter really bring out the umami of the scallops 😚. It was a decisive marriage of scallops and butter 🤗.

Score: 3.5 Rice polishing ratio: 65 Alcohol Content:15%. Vintage:2018 Lemon yellow. Aromas of citrus, green apple, dry rice and toast. The taste is mild without acidity, but has a bitter aftertaste; when heated to around 40 degrees Celsius, the grain aroma becomes stronger and the overall flavor softer.

The seventh GoAllah brewery was Sairyu H29BY 🍶. A young brewer came to the bar as last year. I didn't check because he seemed busy, but I wonder if it was the same person as last year. I wonder if it is the same person as last year 🤔. I had Kui Ryu with hot sake 🍶. The first aroma is mildly sweet like rice candy. On the palate, there is a slight withering nuance, but a mild rice sweetness with a hint of caramel. I enjoyed it with the abalone appetizer that ymdaz posted a picture of (I still only take pictures of sake lol) 😊🍶.
