The day after the nama-shu, we opened the bottle of hi-ire.
The hi-ire was more cohesive than the nama-shu. The acidity is slightly more mature.
However, the world view of umami acidity is the same.

This sake was produced in 2025.03. It has been hi-ire (04).
The only difference on the outside is the Nama-shu seal.

Ama-uma-saaan(Sweet, delicious and acidic)! Very well balanced! Nothing to say. If you see it, you must drink it.
The mouthfeel is mellow, not too light and not too heavy, and it finishes softly. It may not be suitable for those who prefer dry sake.
When I visited Fukuoka in early spring, I went to the Hana-no-Kou Sake Brewery to get a bottle of Hana-no-Kou instead of San-do. This is the one I brought back from among the many varieties of Wakanoha at a sake shop in Yanagawa.

The bitterness is more easily felt when the temperature approaches room temperature.
