I checked in two together, although they are from different breweries. This was my first time drinking Dateseven, but this time the stars of the show were Katsuyama and Sumisuirie, a pair of Orihime and Hikoboshi label types, so I tried them both.
Orihime was easier to drink for me, but both were spicy and sharp, and I felt they were suitable for a mid-meal drink. I think it is a good sake with more umami than sweetness. I think Dateseven makes a different one every time, so I would like to drink next year's if I have a chance.

Taste: refreshing sweetness, slightly unique blue acidity, and finally bitterness, with no alcohol taste
When heated, the sake aroma becomes stronger.
The sweetness and acidity become stronger, but the taste is a little bitter.
It is better to drink cold sake quickly to savor the aftertaste.

Herman Mok
Though they use the same type of rice (Yamadanishiki) with 45% polishing ratio, they come with quite different styles.
勝山style comes with more fruity notes, which is more standard JDG feel. Also it gives you a little bit cream and milk feel, then some minerals, guess it is more on the minty and bamboo feel.
While 墨迺江 style is richer with more complexity. Though it still comes with slight fruity aroma, it is the yogurt and fresh cheese that takes more prominence in taste. Also slight umami spot
