The 2025 version of DATĒ SEVEN uses "Hyogo Prefecture-produced Yamadanishiki" premium rice in order to express a robust rice flavor. This year, the ratio was set at 48%, aiming for a clear, refreshing, and firmer flavor.
The "Urakasumi style" was inspired by the "sea" from Shiogama City in Miyagi Prefecture, our hometown. The blue design features the flow of water and the shape of an island. Using Miyagi yeast and Kyokai No. 12 yeast, it has a well-balanced flavor with a gorgeous yet elegant sweetness and acidity.
The moment I drank it, I felt sweetness, and it was the first fruity sake🍶 I have had in a long time! I had the impression that it had been a long time since I had had a fruity sake.

DATE SEVEN" is a sake brewing event in which seven sake breweries share the brewing process to make one sake.
This year's leader breweries were Urakasumi and Hakurakusei!
By brewing the same rice and at the same rice polishing ratio, the breweries aimed to create a taste that is more distinct from each other.
Urakasumi is a Junmai Daiginjo that uses Kyokai No. 12 yeast and has a fresh and assertive aroma and a taste that harmonizes sweetness and acidity. A refreshing sea bottle that goes well with seafood.
Hakurakusei has a mellow upper aroma reminiscent of ripe melon. The mountain bottle has a fresh acidity and gentle sweetness like white grapes that spreads on the palate and goes well with cheese and meat dishes.

We drank two different kinds of sake today to compare them ✨Hakurakusei style, which is the twin of DATE SEVEN Urakasumi that we drank the other day 🤗.
The top aroma is modest, but it has a slightly sweet tropical flavor. Unlike Urakasumi, the sweetness of the fruitiness comes first, followed by a clear acidity without a moment's pause! From there, this is a nice clean break 😆.
It has sweet and sour taste, but it is also bright and refreshing 🤭.

The position of sweetness is different from Hakurakusei.
Hakurakusei is sweeter on the lower jaw, but Urakasumi is sweeter on the upper jaw.

It's been a while since I've posted, but here it is today! DATE SEVEN urakasumi style! I bought it last month, but there are so many other sake to drink that I bought it today 🤗.
When you open the bottle, it has a juicy and slightly sour aroma! When you put it in your mouth, the sourness and sweetness come close to you, and when you swallow it, it finishes nicely with a hint of bitterness ✨It has a nice mouthfeel that makes it drink like water! It's so good!
I also bought this DATE SEVEN Hakurakusei-style, so I'm looking forward to it 😊.

Junmai Daiginjyo Hakurakusei Style: Evolution of the Earth
The timeline of recent updates is a mess (^_^;)
I bought this at Hasegawa Sake Shop in Tokyo Station when I went back home for a three-day weekend.

The aroma is like melon.
Sweetness and umami at first, then acidity and astringency.
It tastes like white wine.
It gives the impression of a beautiful food wine.

More fruity and sour than Urakasestyle
This one has more impact.
However, the aftertaste is not as strong as the impact, and there is a slight sweet and sour aftertaste, but it finishes nicely.
The sweetness of Urakasumi is surprisingly stronger than Urakasumi.
I think I prefer Hakurakusei though.

Generally, this sake is like water, but with a mild sweetness and flavor.
Rather than being a refreshing sake, as one might expect from Urakasumi, it is more of an assembly of flavors that can be enjoyed on its own.
Sweet and delicious with a firm body on the back end.
This sweet/tart taste is also common with Hakurakusei style.
