My son-in-law is staying with us for a long time as well as GW, so we are bringing out more and more of our keepsakes. I bought this baby for New Year's and put it on NEW BORN. Delicious sweetness, slight fizzy freshness. It is an exquisite product. The rice is Yamada Nishiki, as expected.

This is the second Nihonkai Shoya, and in a way, you may only find it here in Ishikawa. Takashimizu is on the menu. Takashimizu is the name of Kumiko Okae. Bishu Blancman is Ms. Hiromi Manikawa, and although I had little interest in sake when I was a student, I remember both of them. Of course, I drank both Takashimizu and Hachiman, but I had little impression of them. I was so nostalgic that I ordered and asked to take a picture of the sake bottle, and here it is. It seems that Takashimizu's brand is exclusive for restaurants. The aroma is gorgeous, perhaps in the Akita style. The umami flavor is delicious!

The last sake to be introduced at the welcome party was by Nakanori-san, a Kiso connection, since we were unable to prepare sake from Yukawa-san, who brewed Shirakiku in Okunonoto. A comparison of contrasting drinks from Shinshu and Ishikawa. It is the ultimate in rich sweetness, sweet and delicious. It is not clingy, but easy to drink. The sake rice is Miyamanishiki. This sake was the first to disappear.

The third bottle at the welcoming party was a gem of sake rice from Okunoto Wajima Shirakiku Sake Brewery, made with sake rice from Kiso's Yukawa Sake Brewery, a collaboration between an IWC champion and a talented brewery in Okunoto, and it had to be delicious. The elevation difference of 1,000 meters is romantic. Is it unique to Shirakiku that it has a rich yet elegant sweetness and a solid body? Or is it Yukawa's? The acidity can also be felt a little, and it is still delicious.

Welcome party, the second. Many local people do not know what kind of local sake is available, so as the Sake-no-Wa-Uwa-Uwa-tai, we brought some to the company's drinking party to convey the charm of this sake. This one was brewed by Nakajima Sake Brewery, a 100 stone sake brewery in Okunoto, using Azuma Sake Brewery's facilities in Komatsu, which is in the midst of the excitement of the Shinkansen bullet train opening. Welcome party at the company! I brought in four different kinds of sake with different characters as a kind of Noto cheering sake. The first was Kanazawa Nakamuraya. The series is a series of sake brewed by the Ishikawa Sake Brewers Association, with 18 breweries in the prefecture participating with a unified label. Nichiei is another brand of Nakamura Shuzo, the main brand! It is refreshing. The aroma is mild, and it goes down smoothly. I secretly recommend this sake, as it has a lot of fans when you include a bottle in a drinking comparison. It is a local sake of Kanazawa.

The third Noto cheering sake. Somehow, we managed to complete it. We have been donating 1,000 yen per bottle for three months. It is not easy to do, and we bow down to them. Now, pink, modern Yamahai-like, and light. It is the same Hyakumangoku No Shiro (white) as the first one, but this one is much milder. Nevertheless, the elegant sweet acidity is a fine drink. The faint banana aroma is impressive. This is delicious!

Back in the day, Niigata's Sanbai was an extremely hard-to-find brand. I often visited Niigata Takata on business and was often presented with it. At the time, I had no interest in sake at all and almost never went through with it. Now, in 2021, Koshino-Kanbai is easily available at Aeon. Mine-no-Hakubai is also often seen as Hishiko at local liquor stores. However, Yukinubai is not so easy to find in my hometown. So, I got it on a business trip to Joetsu. I paired it with a taste of spring, firefly squid and broccoli with olive oil. It has a moderate aroma of cemedine or banana. It is sweet. It harmonizes with the sweetness and bitterness of firefly squid and broccoli. Lastly, there is a final bitter taste that is refreshing and delicious in the mouth!

This is the last sake rice drinking comparison report. Hitogokochi is rarely available, so I wanted everyone to try it. It was a souvenir from our trip to Matsumoto. The six of us prepared 10 bottles of this sake, but they ran out in an instant. Anyway, it was sweet, tasty, and a little bitter. It has an exquisite taste. I think it is one of the best of Kamerei.

There are only two sake rice study groups left. I've been posting them chippy-chippy, so my notes and my memory are no longer connected. But there is no doubt that they were delicious. The ninth bottle was Kami no Ho from Mie Prefecture. The first bottle was a Saku no Kami no Hoho, which got me hooked on sake rice, but it tasted completely different. The aroma is banana, I guess. It has a slightly sweet taste with a refreshing dryness from the microbubbles. It goes on and on... a never-ending type of sake. The next post should be the last in this study of sake rice.

Sake Rice Research posts were interrupted, so they are back, and this is the 7th one. Since the hidden theme is new sake and spring sake, this is the second bottle in the spring sake category. The rice used for this sake is Hitogokochi, a specialty of Nagano Prefecture. Hitogokochi is delicious, with a strong sense of sweetness. The dryness of the slight effervescence and pleasant fruity taste make it the two ICHIOCHI. Shinshu sake is to be feared.

The sixth sake rice study is a collaboration between Hanafukiyuki, developed in Aomori Prefecture, and Takachiyo Shuzo from Minami Uonuma, Niigata Prefecture. With flat polished rice, Kyokai 18011 yeast, and too many variables, this is becoming a meeting to enjoy good sake. The sweetness is strongly felt, yet it is crisp and clean. As one would expect from Takachiyo, there are no disappointments.

I bought it at the end of the year and drank it the other day with my colleagues. I think the sake rice was Miyamanishiki. Eiko-Fuji never misses. The balance of sweetness, acidity, and bitterness is really wonderful. What was supposed to be a study of sake rice turned out to be a group that drank a lot of great sake. It's all good because it's delicious.
