My brother-in-law and his wife, who live in Tochigi prefecture, came to Nara and bought some Sentori for us to compare 🐰💕. Hatsunugi is a series of sakes from the same tank that can be tasted at once in the "Arabashiri", "Nakadori", and "Sameshime" series according to the point where the sakes were squeezed ✨✨. The rice used is Yamadanishiki and it is a direct unfiltered draft sake with an Alc of 14. I see ✨✨I learned a lot about the different tastes of sake. Sake is really interesting 🐰🎶. Thanks to my brother-in-law who brought 3 bottles from Tochigi for this valuable experience 🌸.

The third stop on our tour of Ishikawa sake breweries was the Naohiko Noguchi Institute. Actually, this is my main destination, but it seems that reservations for the tasting room are booked up a month in advance on weekends and holidays 💦I was a driver this time, so I couldn't do the tasting 😭. (You can enter the tasting room if you order the tea set (1000 yen) from the driver's only menu. Before the tasting, you can take a tour of the brewery (or rather, the Touji Nooguchi history museum) and go to the tasting room Toan ✨. Since the brewing of sake had just finished, Mr. Noriguchi himself came to greet us and gave us time to ask questions and take pictures 🐰🎶. We couldn't do the tasting even though we had come all the way here, so we took a chance and bought a 5500 yen bottle of sake to go home. There was a series of different rice varieties, but I love Aiyama's Yamahai non-filtered raw 💘. The label says AIYAMA2018, but the bottling date is February 2020 and the shipping date is March 2023. Does that mean it was brewed in 2018, stored in tanks for 2 years, and bottled for 3 years 😅I'm not sure💦. Alc 19 for a draft sake after that much storage is amazing! I can't put into words how it tastes... it's too much in the realm of God.

Good evening, Harry 🐰. The Naohiko Noguchi Institute was really nice, surrounded by mountains.　However, it is a 30-minute drive from the nearest Komatsu Station. There is no public transportation, so you have two choices: go there by private car or take a cab for 10,000 yen round trip 😿.

Ishikawa Prefecture Sake Brewery Tour Tour🐰 About 5 minutes drive from Yoshida Brewery in Tedorigawa is Kurumata Brewery of Tengumai. They have just opened a tasting store here and you can enjoy tastings for a fee in a nice store ✨. I bought a bottle of Gorin junmai sake as a souvenir. It has a full-bodied rice flavor with a clean aftertaste, making it a perfect food sake that goes well with food!

I went on a sake brewery tour to Ishikawa Prefecture and bought a bottle of Tedorigawa sparkling 🐰. The rice used is Ishigawamon and it is a modern Yamahai style low-alcohol sake. It has a refreshing mouthfeel with a splash of sizzle and is not sweet, but has a refreshing taste of rice and a bit of sourness ✨. It is a delicious sake that you can drink as much as you want💕

I received a rare sake at work. I think most workplaces usually give cookies as a souvenir when they go on a trip, but at our place, it was sake. Many of the sake that are called "rough-run" have been adjusted to make them easier to drink, but this one was labeled "unpressed sake" and was full of unadjusted flavor😅. It's a 500ml bottle, but it's very peculiar and acidic. It's like a crowded train on a rainy day. I learned a lot! There are so many different kinds of sake!

Pon-chan recommended lol Shiki Retro Label✨ Purchased at Nishimura Sake Shop in Kyoto Nigori sake made from Shiga Prefecture Watabune No.2 with 50% polished rice 😍. It says the yeast is their own yeast 612. It has a deliciously gassy and creamy rice flavor that makes it hard to drink too much 💕.

I received Saku no Hana as part of the "Enjoy what's coming" project and I've been wanting to drink it again ever since ✨. There is no distributor in Kansai, so I bought it at Arakawa Sake Shop in Aichi Prefecture when I went to Maruishi Brewery's Chohyo Festival in December 🐰💕. It's a new sake, so it's fresh and crisp unlike the Saku no Hana I had before, but it's still delicious 💘 It was also selected and served by the Wakabayashi sommelier on Chizuru Ohara's show "Aitenayo", so I hope it will become more famous and available in the Kansai region (or in Nara, if I may be so extravagant) 🐰🎶.

I bought this at a liquor store near Gujo Hachiman when I went to Gifu Prefecture with my husband snowboarding. The owner loves alcohol and music so much that you can tell even on your first visit 🤣. The gin and craft beer selection is amazing and the store is a maniac. Boshimaya? I've never seen this shop before, but I've never seen a zodiac sign label with a rabbit-shaped sticker on it 😅 Isn't that too easy? I was attracted by the Usa sticker and bought it 🐰💕. I wasn't expecting the taste at all, but when I opened the bottle, I said in unison with my husband ❗This is so delicious✨. The fresh, fresh taste is easy to drink and the balance of the rice flavor and moderate acidity makes it easy to pair with a meal ✨. I'm glad I found a sake shop and sake that I want to stop by when I visit Gifu Prefecture again 🎶 I'm sure I'll buy a repeat purchase and try other Boshimaya products as well!

Sake I found at the Hankyu Sake Brewer's Festival. It was my first time ✨Kozaemon, but I like No. 8 yeast so I tasted it and bought it immediately. It has a sweet and sour juicy mouthfeel that is typical of No. 8 yeast, and since it is R4BY, it is also easy to drink with a touch of schwarziness. I think it has a good balance of volume but not heavy. The label on the back says that it goes well with strong dishes, so it has a voluminous taste and would go well with okonomiyaki.

The second bottle selected after Katsuma was quickly emptied. Rice used is 100% Miyamanishiki with a milling ratio of 55% and an Alc of 15 Slightly lower draft sake This is the third Morishima I've bought, and it's easy to drink! It has a good balance of freshness, umami, and cleanness ✨. My husband is anti-Yamadanishiki, so Miyamanishiki seems to be his favorite.

Memorandum post that is accumulating 🐰 Katsukoma Junmai Sake✨ When I went to Toyama prefecture, I looked for a store where I could buy it and could only buy one bottle per family and only the honjozo, but I bought this one at Fukumori Sake Shop in Nara, WW. It's a luxurious junmai sake with a 50% rice polishing ratio and is the ultimate food sake ✨This is just too good! Personally, I prefer this to Tasake's Tokusyu💘 This sake was a perfect match for osechi dishes filled with various flavors!

I've been pretty slack on posting, so I've only selected a few 🐰. I was curious about IWA5 for a long time, so I bought it with a friend for 14800 yen for 720ml. Richard Jofrowa, the former head brewer of Dom Perignon, brews a unique sake by making an assemblage of 5 different types of sake. The rice used is Yamadanishiki from Hyogo and Toyama prefectures, Omachi from Okayama, and Gohyakumangoku from Toyama. The rice is milled to 35% and brewed with five different types of yeast. The top-tasting aroma is a gorgeous aroma intended to be drunk with a glass of wine✨. The taste is so well balanced and beautiful that it is hard to believe that it is an assemblage (blend) of 5 different types of yeast! I don't have enough experience or expressive power to pursue the taste of this sake right now, but I am sure that it is a delicious sake for both sake beginners and experts ✨✨.

Happy New Year 🎍✨ The long awaited first bottle of the New Year is the two hare zodiac labels 🐰💕. This is the zodiac sign labeled Usu nigori that I bought at Maruishi Brewing's Chohyo Festival on December 11 ✨. Of course the sake is delicious, but the Riedel Ni-Rabbit collaboration glass I bought at Maruishi makes the sake even more delicious 🎶 because the glass is thin in the mouth and the aroma is enhanced by the shape of the glass. Kurosawa Shuzo 🐰 purchased at the Hankyu Brewer's Festival It is a vintage Kurosawa Terroir Nama-Hashiro sake brewed with their own cultivated rice and brewer's yeast. It is made from 100% Hitogochiki rice with a milling ratio of 70%, an Alc of 16.5, and a high acidity of 3.2. In the mouth, it has the acidity typical of a sake yeast yeast yeast, but it also has a sweetness that makes it easy to drink. Although the acidity is high, it is not sharp, and the sweetness and depth spread with a firm aftertaste, which is probably the result of the vintage. I bought this wine after tasting it at the brewer's festival, so I can't shake the taste of💘 Yesterday was the last day of work, and this year I've been very busy since October when I started taking individual foreign tourists 💦. On November 19, I went to a salmon spree held at Miyako Messe in Kyoto. The third one was Tottori Prefecture's Hatsu✨Takayuu. From right to left: extremely spicy, super spicy, and extra spicy 🐰🍁. What is surprising is that all three are brewed with Yamada-Nishiki and Tamae at a 50% rice polishing ratio❗❗❗ I wonder why they used high quality rice used for daiginjo to make dry sake with rice polishing that can be used for daiginjo......... From right to left, the sake degree is +15, +10, and +8, and they said it was made with Kumamoto yeast. We also have a signature product named "super dry" with a Sake meter value of +10, but it is totally different because the rice used is Gohyakumangoku. Even though it is brewed dry, it is delicious with the goodness of Yamadanishiki and its ginjo character. The special honjozo has a strong rice flavor and a sake-like mouthfeel. It is a sake I would like to drink lukewarm 🥰. It goes well with grilled smoked squid and the synergy of the flavors makes it hard to stop drinking. Both are fresh and have a moderate acidity and bitterness, making them a good choice for the first drink of the day.
