Celebrating Hirupeko's passing of SAKE DIPLOMA by chuin Sashi-Drinking ⑨Last!
The last sake of the day was Kozaemon's Hatsu Shibori.
It is a junmai ginjo brewed from Dewa Tsanzan polished to 60%.
We drank about 2 gou of sake in all, so not a lot, but please forgive me if I was too busy talking to everyone and not tasting enough.
The appearance was a slightly pale yellow crystal.
The aroma was sweet, but I got the impression that it was very calm for a junmai ginjo.
On the palate, rather than the freshness of a new sake, I thought the sake had a good density and sweetness that made it cohesive.
Thinking back, I have encountered many different kinds of sake since I became interested in sake, and thanks to sake-no-wa, I have met many different people.
Mr. Kawada, the owner of chuin, is like my sake master, and everyone at Sake-no-wa, including Mr. Hirupeko who invited me this time, are my irreplaceable sake friends🍶.
We ended the day wishing each other continued drunkenness (☺️).

Today, my first grandchild was born and to celebrate, I bought some at my usual liquor store on my way home from work.
It is quite emotional.
The sake is fragrant, a little tangy, and Kozaemon is delicious~!
When I was in Gifu on business, I was looking around for something to buy to take home, and Kozaemon caught my eye!
What's this?
Is it a raw sake made with out-of-quality rice?
And it's called "the power of rice" and is made from 100% Hidahomare?
And it's cheap?
I was intrigued and bought it!
When I drank it, it had a slight sourness.
Fresh and delicious 😋.
A little fruity
Maybe I personally prefer it to the Kozaemon I drank before 😘(this one is cheaper though lol)
After a day's travel, I drank the next one and found that the sweetness and sourness had increased 🤣 even more to my liking!
The power of the rice? The power of the brewer? I can feel the effort and skill of the brewer (I think so myself lol)
I don't know, but it's delicious!
I'm glad I brought it back from Gifu in my business backpack.
This is the second season of Kozaemon's limited distribution product.
If I remember correctly from the first season, I personally prefer the second season 😋.

From the smooth mouthfeel, which does not feel the gravity of the brewing water at all, the aroma of rice is gorgeous and penetrates the nostrils. The simple but gentle sweetness and flavor of the rice was fully conveyed. It was a wonderful cup that enveloped me with tenderness.
