I had a junmai ginjo the day before at the hotel, and as one would expect from a junmai ginjo, the first pressing has a fresh aroma and taste that makes it easy to drink.
The regular junmai ginjo seemed a little sweet.

I haven't had a Junmai Daiginjo in a long time.
The aroma is elegant. The taste is getting spicier and spicier.
Shinano Miyamanishiki is used. Labeled light dry. It is not dry. Slightly sweet. This is not a Junmai. It may be too beautiful. I'll refrain from Jungin. Of course, those who like it will like it. It is a good sake brewer.

The Aizan characters on the label were so well written that I couldn't read them at first😅.
There is a mysterious phrase "Kansai only", but it seems to be Amto's original!

This sake seems to be a blend of 30BY and 1BY.
It has a strong taste. It has quite a lot of color.
Smells and tastes like Shaoxing wine 🫶.
I saw someone refilling this one several times 😁.
Moderate aroma.
Lightly watery on the palate, but soon after the pungency of the alcohol and soft fruit acidity are felt. The aftertaste is also watery, but with a slight sweetness and pungency.
