I love this type.
It does not claim to be a daiginjo, but if you taste it carefully, you can still sense its high quality. It is an easy-drinking sake with the robustness of Omachi.

As I mentioned in my profile, my standard for sake is Tasake Special Junmai Sake!
I've had fruity sake and sake with maximum sake content, but despite all the different directions in flavor, absolute harmony seems to be the most important element for me!
In that respect, the cohesiveness and umami of this sake, thank you General!
When I say cohesiveness, I do not mean that it is small in size, but rather that the boundaries are disappearing, and this is transmitted from the tongue to the brain!
It is still extremely hot in the Tokai region, but the feeling of relief that this sake gives me seems to herald the beginning of autumn.

The top aroma has a discreet floral sweetness and a faint alu odor.
In the mouth, there is a soft gasiness, dense nutty sweetness like honey with a strong impact, thickening, light acidity, and a hint of aroma similar to that of Shinshu Kamerei.
It has a silky texture, clear and mellow, and finishes with a pleasant sweet bitterness.
It is so uncommonly delicious that you will finish the whole bottle at once.

But a friend of mine said it was delicious... so I ordered it and got it 🤭 lol

Kozaemon is made by Nakajima Jyozo in Mizunami City, Gifu Prefecture.
The sake rice is Miyamanishiki from neighboring Nagano Prefecture.
It is light, but just as tasty.
It has no peculiarities and goes down smoothly.
We had it cold this time, but we heard that heating it up is also recommended, so we will give it a try next time.
