Assemblage 5 with a "I can't write anymore" feeling.
So this means I drank from 2 to 5.
The taste is definitely different from 3 and 4, but the image of complexity with layers of flavor remains the same.
There is no doubt that it is an interesting sake, and I understand that it is unique.
If I were to speak of simple preference, the reserve was delicious.
I hope that this sake will continue to be a Toyama sake without becoming too rounded.

Well, it is difficult to get to this point.
It is as complicated as ever, but I can't find the words to express it.
Simply put, it is much more preferable than 2.
I don't even know if "delicious" is the right word, so I'll just say I like it.

We'll start with Assemblage 3.
It was complex and had a soft, enveloping flavor.

IWA5 was the next one to come out for a drink comparison after Hayashi, which is outrageous.
The owner of Waka seemed to be the one who was also invited to the brewery and treated us to dinner,

I was a little put off by IWA5 because of the difficulty of assemblage 2, but this reserve was outrageously delicious.
I guess it is correct to say that the flavors are layered, and the wine was heavy and delicious.
From here, IWA time begins.
The latest IWA5; it is interesting to see how it evolves from year to year and how its character changes each year. It has a nice sweetness and spiciness. It is a sake that matches well with a variety of dishes because it does not have a strong personality.
IWA5 from Toyama Drink Comparison Special Set today
At Antenna Shop Toyama Bar. Since we were there, we also had a bottle of IWA5. It was developed by a Frenchman who was the chief brewer of Dom Perignon.
Well, this is interesting!
In short, it's a blend of 5 different liquors? (According to the official description, there are about 20 original liquors 😅)
Complex! Delicate but bold!
I feel like it has many faces.
Too bad it's a bit expensive and only 30ml 😅.
