The aroma is subdued.
The first thing you feel when you drink it is the acidity. It is hard to find an appropriate word to describe it, but it is combined with bitterness to give a unique taste.
It has a crisp and refreshing aftertaste that is typical of Gohyakumangoku.
It seems that G2 yeast (Gifu yeast) is used.
Gifu also has a variety of good sake. There is also Tsushimaya and W.
When I visited Gifu City two years ago, I could not touch sake very much, so I would like to go to Gifu for sake next time.

I was very happy when I paired it with a tsukkimaki made from the offal I bought at the Sakai Tuna Park.

It's interesting to see how different it is from Sakai Higashi. The selection of goods is good and there is always Fusashimaya. I have seen Kamikamiya that uses Sakai rice and Amano sake sold by weight 😉.
It may depend on your physical condition, but it shows us a variety of faces. I had it warmed from human body temperature to lukewarm.

The aroma is apple-like ginjo aroma.
The acidity and sweetness are moderate. The umami is emphasized. It has a slightly strong alcohol taste, but it has no habits and is easy to drink.
There is only one more sake from Gifu Prefecture that I have yet to try.
I hope to be able to purchase it this year.
