Kozaemon Junmai Ginjo Bizen Omachi Pile Driver
Kozaemon, from Gifu Prefecture, is a draft sake!
After much thought about how to bottle the sake
They say it's called "Pile Driver".

Slightly effervescent, with a strong aroma.
More sweetness than acidity.
The sharpness is good, but the sweetness remains a little.
It is very good to drink immediately after opening the bottle.
I wonder if it changes a little if you drink it again after a day.
I expect it will become an interesting drink after the freshness of micro-foaming is gone...

Kozaemon, a good sake from Gifu, Japan
Apple aroma. There is a sense of schwashiness. Unlike its appearance, there is almost no sweetness. After drinking it, you may feel a little bitterness, but it tastes good.
It was getting close to the time for the restaurant we had reserved 🍶 so we went to the second restaurant 🍶.
We met up with the other members and it was time to get down to business😃.
The first bottle at the second restaurant was Kozaemon's Sushi Label 🍣.

It has been quite a while since I have had a sake from Gifu.
It has a delicious rice flavor and acidity.
It also has a nice sharpness.
I had it with sashimi and sushi and it went well with them as the label says 🍣.
Can't stop drinking sake with fish ✨.

Kozaemon Tori-Label [Gifu Prefecture, Nakajima Brewery
Sourness on the palate with a hint of sweetness. Apple and saltiness. The lingering astringent taste and alcohol taste.
Ingredients: Rice (domestic), Rice malt (domestic)
Rice used: 100% Miyamanishiki
Rice polishing ratio: 55
Alcohol content: 15.5

Purchased at Nakajima Brewing's "Spring Banquet 2025".
Slightly carbonated bubbles attach to the vessel.
Not dry, this sake is gorgeous and easy to drink.
It is my personal favorite.
Brewer's comment: "Sake made with locally grown rice. An unfiltered, unpasteurized, jicagumi sake. It has a strong aroma and flavor, with a pleasant, chili-like, slightly carbonated aroma and flavor rich for a daiginjo, so it goes well with dishes with strong flavors, such as fried chicken, chili shrimp, and nameko mushrooms."
