The third stop on our tour of Ishikawa sake breweries was the Naohiko Noguchi Institute.
Actually, this is my main destination, but it seems that reservations for the tasting room are booked up a month in advance on weekends and holidays 💦I was a driver this time, so I couldn't do the tasting 😭.
(You can enter the tasting room if you order the tea set (1000 yen) from the driver's only menu.
Before the tasting, you can take a tour of the brewery (or rather, the Touji Nooguchi history museum) and go to the tasting room Toan ✨.
Since the brewing of sake had just finished, Mr. Noriguchi himself came to greet us and gave us time to ask questions and take pictures 🐰🎶.
We couldn't do the tasting even though we had come all the way here, so we took a chance and bought a 5500 yen bottle of sake to go home.
There was a series of different rice varieties, but I love Aiyama's Yamahai non-filtered raw 💘.
The label says AIYAMA2018, but the bottling date is February 2020 and the shipping date is March 2023.
Does that mean it was brewed in 2018, stored in tanks for 2 years, and bottled for 3 years 😅I'm not sure💦.
Alc 19 for a draft sake after that much storage is amazing!
I can't put into words how it tastes... it's too much in the realm of God.

The Naohiko Noguchi Institute was really nice, surrounded by mountains. However, it is a 30-minute drive from the nearest Komatsu Station. There is no public transportation, so you have two choices: go there by private car or take a cab for 10,000 yen round trip 😿.

Usagigoten, how I envy you🤗. I see you were able to meet Mr. Touji Noriguchi. I was not able to meet him when I went there last March 😢. I was satisfied with the tasting (me), but the price was still expensive, even for a driver (my husband) it was 3,000 yen 😅.
