I saw this in an ANA in-flight magazine or an in-flight program, and it's made by the guy in charge of brewing Dom Perignon. I had wanted to try it, and I thought I had found it here.

The label doesn't say, but it's junmai. Assemblage is a technique used mainly in wine, right? I don't hear it often in sake.
Is it a vintage of 2021?

I have been on a trip to Toyama with my parents since yesterday🚙.
The weather, which I was worried about, is fine and pleasant.
The first night in Toyama was at Sushi Namba.
My father was very pleased with the sushi, which he hadn't had in a long time.
The staff at the restaurant was very friendly and helpful, and we had a great time talking with my parents while eating delicious food.

First, the aroma.
The aroma was slightly refreshing.

The sweetness and bitterness were not so pronounced, and the gentle spiciness was impressive.

It was the first time for all of us to visit Toyama prefecture in our lives, but the food and drinks were delicious, my parents were fine, and it was an extraordinary fun time 🎵.

This is an expensive sake made by a famous French champagne brewer.
I got half a bottle at the Toyama antenna store in Nihonbashi, and the price is the same as that of Jyushidai Junmai Ginjo.
The taste was that of a Hokuriku sake of the royal road.
I am not sure if my taste buds can distinguish it from Manjusen's ginjo-shu.

At Toyama Bar in Toyama-kan, Toyama's antenna store in Nihonbashi.
IWA5 was 2,300 yen per glass, so I had it.
Simply mixing good sake does not make it tasty, but this is a sake that has been carefully selected and mixed. This is a crude interpretation.
It has a sweetness without any cloying taste, and the aroma is subtle.
It may be complex, but it is not an "unfamiliar taste" but a "delicious" taste, and the skill of the blender and the judgment of the palate made me groan while drinking this cup.
