Yesterday, we had a dinner at Hatchonawate in Kawasaki, and since we arrived at the restaurant early, we went to the nearby Kubota Sake Brewery for two drinks 🍶.
This is the second time I've been to Kubota Sake Brewery, where you can drink beer poured from a swinging column 🥰.
Well, I had the first one with Takeyuki from CWS ✨.
The aroma is mild. No gas, soft mouthfeel. It started with sweet and sourness, and gradually acidity started to build up. The aftertaste was also faintly bitter. The sweet and sourness was impressive 🍶.
I wonder if it has been open for a long time, some liquor store reviews said it had a strong aroma, and some said it had chili gas, but I didn't feel any of that 🤔.

It has a calm sweet umami flavor with a hint of coarse grain and grain aroma, and although it is a honjozo sake, it has a nice spread of a slight chili flavor that is found in nama sake.
It has a slightly bitter aftertaste with a hint of woody aroma, and a rather strong acidity that hits the tongue and the back of the throat. It was a slightly spicy, rich and delicious sake that made me want to drink more 😙.
The third one is thick Niboshi Soba!

Tonight's sake is Takeyuki Hiyoroshi. It is a hi-iru sake, so there is almost no bubbling, but it has a fresh melon-like sweetness that is typical of Takeyuki, and the umami flavor is also well balanced.
It is light, yet has just the right amount of sake flavor, making it a perfect match for the autumn flavors.
