Is it because it contains lactic acid bacteria? I think it is because it contains lactobacillus. I think it is a rich or umami type sake. I think it would go better with nameko mushrooms than sashimi. #This is my personal opinion😊.

National Sake Fair 2025 in Osaka21 Ibaraki Prefecture Booth 11 Takeyuki Corporation is located in Yuki City. Takeyuki is relatively available in Kansai, so I thought about going through with it, but I couldn't afford to buy an expensive one with a high-end-looking label, so I tasted it. Takeyu Junmai Daiginjo KAZE The aroma is slightly fruity and the taste is clear and clean, with a distinct sweetness and umami. I was glad I was drinking it because it was still a very expensive sake at 5,500 yen.

National Sake Fair 202521 Ibaraki Prefecture⑫ Takeyuu in Yuki City I've had Takeyuki a few times, but I'll try this one because it's jun-dai and has a cool label. Polishing ratio 40%, Yamadanishiki 15%, 5500 yen This sake is a new flagship product of Takeyuu, which is a sake that is almost directly made from the sake entered in the sake competition. It's dry, calm, but sweet and delicious! When I checked the price later, I was surprised to find it was more expensive than I expected 😳.

Takeyu Junmai Daiginjo Aiyama Nama-nihonjyu with Ogawa yeast 720ml Rice:Aiyama Rice polishing ratio: 45 Alcohol content: 15 Aizan ✖️ Ogawa yeast, opened the bottle. It was not as sweet as I had imagined. The elegant and gorgeous taste was mellowed, so maybe I did not feel the sweetness as much as I expected. The label on the back says, "Please enjoy the gentle aroma of Ogawa yeast and the taste of Aizan. I see what you mean 😃. But it's a luxurious sake!

It has a pretty name, but it is quite dry and has a peculiar, robust flavor, as if it had been aged for a long time. It also reminded me of Urboros, a noble sake I drank for the first time the other day. The color is clear, and it tastes like a sake made from the yeast of a traditional sake brewery 👅. It was my first time drinking Takeyoshi. 🗡️ 6/11 A few days after opening the bottle, the taste has rounded out! It used to be peculiar, but now it's getting older and gentler! I like the gentle one, too. I like the gentler one, but I can't get rid of the bold flavor of the first one, so I decided to warm it up! The aroma is robust and the taste is mild! Great flavor and a bit of acidity too 😆.

Takeyoshi, I love you♪ Aizan is now open 🎉! What a surprise for the Takeyuki CWS this time! It's Aizan ❤️. Moreover, this is the first I Love You brewed by Takeyuki using Aizan 😆. What's more! It's a straight-up raw sake 🙌. I've had a few I Love You's so far and they were all delicious, so my expectations are high for this one too 😉. So let's get to it 🥂. First, the aroma. There is not much aroma. When you put it in your mouth, you will feel a gentle sweetness. In the second half, astringency and bitterness develop, and although there is no gasiness, this astringency spreads in a way that makes you think it is gas. The sharpness is normal. The astringency and bitterness remain in the aftertaste. Hmm...🤔 Aizan... you know... This may be my assumption, Aizan = sweet I thought it was sweet. But none of the Aizan sake I drank this year was sweet. In other words, Aizan = not sweet. That's what it turned out to be in my mind😅. Not not sweet at all, but just slightly sweet. I was told not to expect sweetness... 🥺. So I guess my expectations were too high for this I Love You 😭. The astringency and bitterness in the second half is also strong and a complete loss for me 🙇‍♀️ But I Love You is definitely a delicious drink 🥰. I will continue to check out the next CWS 🤗.
