It was made in March 🙄 It was probably a spring sake ⁈It had a subtle apple-like ginjo aroma, a calm taste as if it had been laid down at a low temperature for a while, a little apricot? It has a sweetness like cotton candy and umami. It has a light, crisp taste with a moderate acidity derived from the nama-moto (sake brewing process). The bitterness in the aftertaste reminded me of pickled plum seeds in plum wine or plum syrup with soda. Easy to drink at 14 degrees al.
