#Otaru#. I was a lecturer at a conference for companies. In the evening in Otaru, we had a get-together with the participating companies. The sake served there was Otaru's local sake. I've known the name for a while, but this is my first time drinking it. The rice is 100% Shukumei. It's fruity at first, but at the end, it hits you hard. It was easier to drink Gohyakumangoku, a special junmai, but I thought it had a common taste and passed it up. This one has more character. It is fruity and dry.

First Fushimi sake after debuting at Sake-no-wa! It's been a while since we went to Kyoto, so we decided to buy a bottle of Fushimi sake. The first time I took it out of the refrigerator, I had the impression that it was too alcoholic to be good for me😑. However, as the temperature gets closer to room temperature, the sweetness increases and it's nice 😳 It's mellow and easy to drink like Fushimi sake. It's delicious! This is a sake that should not be chilled, but lukewarm heating might be good too🤔. I'm so glad I bought it in the end ☺️.

A fellow triathlete was at Daimaru in Kyoto, A triathlete friend of mine was at Daimaru in Kyoto and bought it on the recommendation of the clerk. He asked me to come over to his house to drink it 🍾. If we're going to drink, let's practice first ⤴︎ So 🏊&🚲&🏃♂️ practice and then party 🍻. It's aged well and colored perfectly ✨. I usually don't drink that much 🍷 and 🍶 a little vacation. I only drink Nouveau 🍷 at a small wine specialty shop owned by the owner, who has experience as the best sommelier in Japan every year. I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

The general meeting at the end of last month was held at a local grand hotel, and the sake used was Nanafukujin Junmai from the Kiku no Tsukasa Sake Brewery. The sake used was Nanafukujin Junmai by Kikunoji Sake Brewery. It is not sticky-sweet, but rather light and easy to drink. If the sake is not made with the same level of care and attention as the all-you-can-drink sake, more and more people will leave the sake industry, and short-term tricks will not be effective these days. This Sake surprised me. It starts sweet and fizzy then finishes dry. There is a soft mouth feel with a mild flavor of sweet pear. The finish is dry and clean. I am enjoying this as an after drink. 😃

This Sake is slightly dry with an earthy aroma. There are flavors of mushroom and wood. Sweetness and acidity are present towards the end. The flavor profile is different from other Niigata Sake I have tried. Guess I need to drink more Sake. 😁
