From the jacket, I thought it would be a light, dry, smooth and elegant type 🤔. When I drank it, I found it to be medium dry with a solid richness and flavor... 😋 I felt like we suddenly became friends🎶. Sauteed peppers with salted kelp (salted kelp flavor), turban shells in a jar, goes well with a variety of Japanese food😻 It's also a great gift 👍✨.

At the tasting. It's clean, clear and beautiful. Not bad, but I'll hold off. There was a tasting of the raw Izono, but they didn't have it in stock, so I didn't drink it. I'm interested in the raw version.

I usually don't drink that much 🍷 and 🍶 a little vacation. I only drink Nouveau 🍷 at a small wine specialty shop owned by the owner, who has experience as the best sommelier in Japan every year. (I told him that I actually like Sake and he said that he only drinks Obuse Sogape and one other sake brewery for everyday drinking...I'm curious...wait a minute...he came from the back and brought me this! I'm sorry, I don't know this brewery...but they have hiyaoroshi and yamahai. So he shared his favorite hiyaoroshi with me! It's easy to drink, has a nice mouthfeel, and is dry with a nice flavor and sharpness. It's also delicious and reminds me of a white wine! The Nouveau chosen by the owner this year was expensive... but he said he had no choice because of the weak yen and the international situation.

伊乎乃　辛口山廃　純米吟醸　原酒 Iono Karakuchi Yamahai Junmai Ginjo Genshu 精米歩合　55% Seimaibuai アルコール　17％ alcohol 日本酒度　+7 Nihonshudo 酸度　1.5 Acidity Has a smooth Karakuchi flavor. If the label didn’t tell me, I would never guess that it’s a Yamahai or Junmai or even a Genshu. This Iono avoids the extreme flavors from each of those categories It DOES NOT have a chewy full flavor of a yamahai or Junmai. It does not have an overly sharp alcohol flavor like some Genshus It’s very well balanced! Delicious

First drink of IONO from Takai Sake Brewery The sake has a clean mouthfeel and a strong aftertaste, and it's good for drinking while talking slowly.

It is a much gentler umami or sweeter flavor. The sweetness comes before the umami, but there is no lack of umami. The aftertaste is a sourness that gradually fades away. It may be too gentle and not enough, but if I say that it never interferes with food, it may be true. However, it doesn't seem to complement each other...
