Commentary.
This sake is made from "Sanke Nishiki," a new type of sake rice born in Shinshu.
Sankenishiki" is a new sake rice bred by the Nagano Prefectural Agricultural Experiment Station and named after the "blessings from the mountains of Shinshu".
Togakushi is made from 35% polished rice and brewed with 60% polished rice, giving it a gorgeous aroma and a light, smooth, slightly dry impression on the palate.
It is the pride of Nagano Prefecture.
It is light on the palate and delicious.
Yamae Nishiki was purchased out of curiosity.
The aroma is slightly sour and fruity.
When you drink it, it has a slight sweetness, but it disappears with a sip. It disappears with a sigh. It is a smooth, refreshing, soft sake with a modest aftertaste. As the temperature rises a little, the sweetness and umami gently increase while maintaining the softness, making it delicious.
It remains stable the next day and beyond.
As the label says, the aroma itself is not strong at all, but it is certainly gorgeous, fruity, and softly pleasantly sweet.
When drinking it, the taste is indeed sweet, but with smart sweetness, umami, and acidity. It is not a sharp taste. There is no pinpoint emphasis on any flavor or spikiness, but rather a softness. It is classic and quiet. The taste is well behaved, clean, and transparent. It is refreshing, but not too sharp, and its assertiveness in processing is moderate, making it a perfect match for light meals.
Next is Togakushi.
The taste is just like Matsuo.
This one is Yamae-Nishiki, but I didn't notice much difference in the sake rice. (Stupid tongue).
The sweetness and umami of the rice is nice and refreshing. The slight acidity gives it a refreshing taste.
The raw sake has a strong sweetness and umami. It is delicious.
Personally, I prefer this to Matsuo's Hi-iri.
It seems that Ikebukuro is going to start applying for sake fairs.

Another liquor store we visited during the Mahjong Club's Tokyo training camp was Kakinuma Sake Shop! I've been a customer of theirs online, but this is my first visit ✨.
I thought it was a pretty big store, but it seemed quite small, probably due to the large number of people! There were so many customers in front of the showcase that it was hard to move 💦.
Then I found my first Togakushi 😊.
The label says it's a little dry,
It has a very fruity and sweet aroma 🍈🍈🍈🍈🍈🍈.
The taste is also fruity, sweet and delicious, with a light bitterness and sharpness✨.

Sake rice is Yamae-Nishiki from Nagano, Japan.
Koji rice is 35% and Kake rice is 58% polished rice.
The alcohol content is 15.5%.
The aroma is like a sweet ginjo aroma of muscat

The taste is sweet and umami, not too sour and mellow.
It is mellow and not too acidic.
The sweetness is not too strong, so it has a nice sharpness.
