2024 Spring Evening - Tasting New Sake - 18Last. Yoshinotomo Junmai Ginjyo Nama Nama Sake Tominokou As I recall, it is a current sake with apple blossom yeast. I heard that there were 40 kinds of sake at this banquet, but only 18 made it to the end. Each brewer's brewing water was also offered as a Wakarimizu. We were fully entertained, thank you very much to the secretariat 😊.

Ordered after the taxi driver. Also raw sake. It's called "Soma no Tengu". It is not possible to read it if it notices the frigana of the label. I'm sorry. It's as difficult to read as Kireuriwari in Osaka. Well, how is the taste...? It's been a long time since I drank muddled sake, so I had a strange feeling at the first sip, but the sweetness came, and I thought it was characteristic to change to sourness soon. I drank it up with some sea bream stew and enjoyed it.

At home. Osaka Kawachinagano Amano Sake, the first time I️ had this sake. This brewery is located on Koya Kaido, and the surrounding area has a nice atmosphere. It was my first time to visit there, but it must be a famous place. The taste was quite dry, and it was a taste for adults.

Amano Sake Grand Sake Party(*) This is Amano sake's summer product. It has the core strength of the original sake and is spicy! I think it falls into the slightly dry category Amano Sake is not seen at all within the range of my activities. I was surprised to see Kuninonaga Junmai Ginjo on sale at a nearby 7-Eleven.

Purchased at Sota Watanabe Shoten in August. When I went camping in the summer, I attended with melons from Yamama and Niida Zenshu, but both were gone in an instant, so I didn't raise them to check in 😂. Such is the classic brand of the Niida head family. Did I drink it cold (room temperature) at first? I don't remember. (LOL) I thought it was very tasty when I drank it heated (probably hot)! I thought it was delicious! The complex acidity and umami of the rice, unique to the brewer's yeast, is extended by the warming up of the sake! I love the way the flavor expands when heated. I think it tastes great chilled, but I wouldn't hesitate to recommend heating it up. I might want to keep this one on hand. I'm glad I don't have to put the classic in the fridge. I would love to have a fridge for sake, but...

Ingredient rice: Natural rice (naturally favorable rice grown without using any fertilizers such as pesticides or compost) Rice polishing ratio 90 Alcohol content 15 Niida Honke's sake has been getting a good reputation lately. Personally, I bought this sake because I am in a mini-boom for a higher level of sake other than sweet and fruity. Here we go! The aroma is... What is this? It smells simple and sweet, like freshly baked bread. I have never tasted a sake with such an aroma. The mysterious brewing water is soft, slightly viscous, mineral, and translucent. The sweetness is like freshly baked bread, and the robust, tight rice flavor is as vibrant as ever. There is also a hint of acidity, which is probably due to the use of the sake yeast, but at any rate, it is full of umami. Tamura is a gem that is profound yet light, powerful yet gentle, and a contradiction in terms. It disappeared with a slight sharpness in the back of the throat. In recent years, an increasing number of popular sakes are being hailed as wine-like sake with a sweet and sour taste like grapes. Of course, I like these sake as well. But if you ask me which sake made from rice has the weight, lingering aftertaste, complexity, and simplicity of red wine, I would drink Tamura without hesitation. Thank you again for the food tonight!

Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

We opened a bottle of Daikoku that we bought today at Kado-ya Sake Shop. It is said that this sake is brewed with 100% Yamada Nishiki harvested in a special area of Hyogo Prefecture. It's rich and dry. The rich taste in the mouth and the long lingering spiciness are exquisite. I think it's a very cost effective sake.

This was the first time I drank Daikoku Masamune at home. I bought it at the direct sales counter of the brewery. The aroma is mild, but the taste is fresh and fruity. It was really good even when it was heated. The reinforced concrete brewery was demolished due to old age, and a prefabricated direct sales store was built on the site, with the rest of the land used for a convenience store and Marugame Seimen noodles. The rest of the land is used for convenience stores, Marugame Seimen noodles, etc. Now they are brewing in a rented part of Hakutsuru Brewery. At the time of the Great Hanshin Earthquake, the wooden warehouse collapsed, and the site of the warehouse was turned into an apartment building, which was named Daikoku Royal Heights.

Daikoku Masamune Junmai Ginjo Hyogo Yume Nishiki I like this sake very much😍. Calm and soft umami on the palate 😌. Gentle spiciness with a clean finish 😊. Overall, it's very cohesive and delicious 😋️‼️. The Sengoku I drank with it made me feel like a bit of a yankee 😆. Sweet and juicy is good, but I guess I prefer light and dry 🥰🥰. The last one I drank was also good, but This Daikoku Masamune was excellent👍🤣‼️.

This is one of the bottles that was sold in a set with Tobiroki at Hasegawa sake shop, it was made in October 2020, so I guess they used Tobiroki to clear this stock 😅. I'm not a big fan of the Satsuma Masamune, but I'm not a big fan of the Tobiroki either. I was a bit worried because it's a raw stored sake, almost a year after production, but there were no quality issues 😄. Rather, I didn't feel the peculiarity that I felt when I drank Junmai Ginjo before, and it tastes better than that time 🌟. It has a slight sweetness, a strong alcohol feeling and a spiciness that comes down the throat, not very distinctive but enough for everyday drinking. Cold sake is the best 😚

"Believing in something is a responsibility. Even if the result of believing is not as you expected, it is your responsibility. "I don't recommend it as a liquor store. But if you're buying it for yourself, you might want to keep it at room temperature before drinking it, even though it's raw sake. Even if it fails, it is my responsibility to make the right choice, so don't worry. It's been one month since I stored it. The color is yellowish and reminds me of a strong taste. The aroma is fermented and ripe. In the mouth... the taste is juicy and complex, a true taste of rice! The initial specs are that it is a little dry, but as it ages, the sweetness is brought out and it is very Tsuchida-like. It has the flavor of a dense, rich, umami flavor that brings out so much of the rice flavor, and the flavor deepens more and more to the point that it cannot be described in a single word." This flavor!" The taste develops further from the point where the tongue catches it. On the other hand, if you put it in your mouth and drink it right away, you will be surprised at how easy it is to drink. This is too good to be true... I'm glad the drinker believes in the drinker... Next year, I'm going to try drinking it refrigerated. I wonder what it will taste like. PS...After another month of opening the bottle, a nice fermented aroma comes out. This one's good too!
