My parents-in-law gave me this sake as a souvenir from Tanba Sasayama. It's a completely unknown brand, so I was very nervous when I opened the bottle. Maybe it's because we've been drinking a lot of autumn sake lately, but it's surprisingly refreshing 😳 You can drink it easily without getting stuck. It has a faint sourness and a spiciness that comes afterwards, and then it goes away quickly. It's a sake made with clean water that goes well with all kinds of food. We enjoyed it with pork kimchi and horse mackerel sashimi. I want to drink it carefully, but it will probably be gone in two days☺️.

This sake is limited to two liquor stores, one in Sakai and the other in Kishiwada. KATSURAGAWA, which had been laid up for about a year and a half. It's too early to tell, but I'm looking forward to a summer sake on the rocks, and this time I'll have a glass of the standard warmed sake 🍶. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. I think it's time to open a bottle of "Akagisan" summer sake!

This is the second time this spring I purchased arabashiri nama-zake ICHIMATSU. The last time, the condition of the second day was not so good due to a malfunction of the stopper, so I purchased it again. We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". OSAKA SAKE & FOOD EXPO 2024⑧ This is another unknown sake brewery, Yukijaku Sake Brewery. It is made from Yamada-Nishiki with a 38% rice polishing ratio and unfiltered. According to the official website, there are two types of sake: hi-ire and nama, but the one I drank was probably hi-ire. I think it was fruity and quite sweet 🤔. Forgot to take notes💦.

I stopped by the brewery for the first time in a while. I used to have a special fire-brewed junmai and a sake called "Mariko no shu" which is named after the female toji (master brewer?). Both were quite dry, classical sake. Both were quite dry classical sake, and I had the impression, for better or worse, that this is what local sake is supposed to be like. This was probably my first nigori sake, but it looked delicious, so I bought some! I wondered if the beautiful woman at the sales counter was Mariko herself? It has a classical aroma with a banana feel. It is more of a hint than a standing aroma. It has a classical taste and is dry, but you can drink it by itself if you want! It is very easy to drink because it has a lot of turbidity, which gives it a strong umami flavor and makes it easy to taste the sweetness. I drank it with kimchi nabe (kimchi stew), and I think it goes well with strong flavors and nabe dishes! It also seems to go well with meat, and I am sure it would go well with ginger-grilled pork or chicken steak. I imagine it is like Kikuhime nigori or Tamagawa nigori! To be honest, I think it's one of the best in the Koshu Plum Grove, so I'd be happy to buy a bottle and drink it slowly. It can probably be stored at room temperature until early spring.

I had decided on Mariko's Sake for my first visit to Saitama. The Sato Sake Brewery is run by Mariko Sato, the toji of the brewery. There is almost no alcohol taste, and the spiciness comes later with more umami. It is sweet and umami, but the spiciness lingers a little.

(- 迭- )🍶🍶🍶🍶 Today I got a sake called Chushingura that I got as a gift 😀 It says it's first shibori-nama-shu but it was aged at room temperature for more than 6 months 🤣Strong style 🔥💪🏾 but I chilled it before drinking 👀. The aroma is mild🤔. When you put it in your mouth, the rich flavor of rice 🌾 spreads in your mouth 😊👍and it has a nice sharpness so it's a very drinkable sake 😚👌. I don't know about the original raw, but this is a delicious sake 🥳.
