. The other day I had the First Edition and this time I had the Trial Edition😍. The moment I put it in my mouth, I could taste the richness of the flavor ✨. The basic taste is clear, but the sweetness and acidity are very clear ❗ Maybe it's because I was drinking something lighter earlier, but the richness and depth of the flavor is very nice. 👍️ I'm convinced it's delicious after all 😋.

S Kaze no Mori is a farmer's sake sold by Sugiura Noen, a farmer who delivers rice called Akitsuho to Aburacho Brewery. It has a sweetness like a ramune, but while the mouthfeel cuts through easily, the aftertaste is complex with a lingering finish. Nice!

This is the culmination of the trilogy of the S Kaze no Mori Edition series, brewed with 2023 rice. It shows the style of S Kaze no Mori with its bright and refreshing tropical taste and fresh, clear and dry loose taste. Brewed with ultra-low milling of pesticide-free and chemical fertilizer-free Akitsuho rice, this sake has a future sake degree of ⭐︎⭐︎. The blue label represents the lush green of a paddy field filled with water before rice cultivation. The appearance is pale gold with a hint of green crystal. The aroma is fresh and bouncy tropical. The nose is fresh and bouncy with tropical notes of sweet mango, fresh passion fruit, and ripe le le leche. The nose has a white rice dumpling-like aroma and powdery lime minerality. The punchy sweetness and assertive acidity spread freshly and with a chili gas sensation. The wine develops into a clear, yet deep flavor, and the sensation as it leaves the cellar shifts to dryness. The final part of the wine is clear and crisp with a firm bitterness and a slight astringency. There is a beautiful complexity in the aftertaste. No sense of low milled rice at all 😳. It is very hard to believe that the rice is over 90% polished! Tropical aroma with a tropical feel and clear dry taste. This is awesome! I look forward to seeing more in the future 🍶.

I opened a bottle of a souvenir I bought in Hawaii. This one is a so-called craft saké of lilikoi (passion fruit). I had heard that they had built a brewery relatively close to Waikiki and wanted to go there, but unfortunately, the brewery has moved to the Big Island of Hawaii in 2022, leaving only the store. The aroma was sour and koji-like, with a hint of Japanese sake, and a soft tropical breeze! It is not as fruity as one might imagine. When you taste it, it has a light, acidic flavor, but it is not a citrusy, sour sake either. It has a refreshing sweetness and acidity with a clean aftertaste, but it also has more rice than expected, making it more like a sake. It has a tropical flavor, but I thought it would be more like a juice. It goes well with vinegar-based foods such as salads. The volume is blinding, but the end of the bottle has more lilikoi than the beginning. The flavor is refreshingly tropical and astringent when you bite into the seeds, and the sake flavor is light. I enjoyed it with thoughts such as, "I want to go back soon. By the way, the store that handles Junmai Ginjo...which part of Junmai is Junmai? I thought, "What part of Junmai is Junmai? If I have a chance, I would like to try the Junmai one.

The 7th Matsuo Taisha Sake-1 Grand Prix ④ Islander sake brewery had a stall at "Sake World Summit in KYOTO" and we were curious about it. Since the system of multiple lines was not good for time performance, bouken and I changed to a sharing strategy. They had passion fruit, Kona coffee, and Junmai Daiginjo. ISLANDER SAKE Junmai Daiginjo Unfiltered Nama-Genshu. It was a proper sake with a gentle acidity and a rather refreshing taste. It is a loose sake that is a little lacking in my opinion. The price is expensive, so I don't think I will buy it. ISLANDER SAKE Kona Coffee The color is a little brownish and it smells like coffee. I always drink my coffee black, so I thought it was very light coffee. I don't think I'll buy this one either. Here, I ran into the owner and manager of "Sake Bar Shinshiro," which I had visited with bouken-san before.

I remember the last time I drank Miyaganbai, it was delicious 🤔. I knew there was a sake collaboration between my neighborhood liquor store and the Kanmei Brewery, but I put it off thinking I could always buy it. But it's plum season and I finally bought it (almost, coyly). Oyusaki Quartet I heard that the name "Uguisaki" is a play on Osaki, where the cold plum trees are located, or plum blossoms and bush warblers (Uguisu), and many other things! At first, you can taste a little sourness. It's just a little bit sour, but it's not too much. The sweetness is soft and lingers on the tongue. Maybe a little more refreshing than the Miyakanume I had before (not sure I remember that 😆). Fresh, fruity and a little different from the gentle sweetness of rice. Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

It is said to be an irregular sake. The toji-san overfilled it with 4-stage rice or something😅.
