It's been a long time since I've had my mind blown! This is a drunken sake 🥰. I bought it at Takatsu Sake Shop in Kusatsu City, Shiga Prefecture! The appearance is pale yellow in color. A gaseous feeling with bubbles floating in the sake cup. The aroma is sweet, glossy and fresh. Sweet aromas of well ripened banana and melon-like weight. And yet, it contains a refreshingly cool sense of selfeil. The rice aroma is about the size of a white dumpling. The mouthfeel is smooth with a gentle stimulation of lively gasiness. The palate is a rush of pleasantly intoxicating sweetness that overflows with fruity notes. The fresh acidity balances the fruity sweetness. While the fresh, bouncy, rich flavor is overwhelming, the rich umami of the rice flows with the sweetness, and the gasiness and acidity are light. The nose has a sweet, rich nuance with a slight hint of nail polish that gives it a cool impression. There is also a sense of umami core with a freshness. There is also a bitter tightness from the last part of the bottle, and the sharpness is not bad. The lingering aftertaste is long. Deliciousness that makes you grin and smile. ☺️ Well, I was a bit impressed after a long time 😳 I want to spread this kind of sake!

I am here in Otsu. Stay overnight today and go to Eizan tomorrow. We stayed at Otsujuku on the old Tokaido Highway. Shikoku x Sake Country 2025 Sake Brewery Wonderland On Osaka⑤. The booth of "Kaze no Sato" in Ehime. After suffering tremendous damage from the torrential rains in western Japan in 2018, the brewery decided to revive itself with the support of local people, fellow members of the sake brewers association, and volunteers. The brewery has recovered through crowdfunding and other means, and this one is also not to be found in the Kansai region. Junmai ◉ Junmai The aroma is a bit peculiar. It may be an off-flavor. The flavor is firm and a bit nutty. They say it is recommended to be heated. Junmai Ginjo Not too much sweetness and umami, but a mild acidity. Junmai Daiginjo Uzu The aroma is a little subdued, and the sweetness and umami are refreshing, the type of sake that goes well with river fish. Junmai Ginjo-shu Sakurahime A junmai ginjo-shu brewed with Sakurahime yeast. It has a clear, sweet and umami taste with a clean and refreshing aftertaste. Rice flavor and a bit of fruitiness. The taste itself is nice, but there is something strange about it... Kaze no Sato Junmai Ginjo Shizuku Ehime, Polishing ratio 50%, EK-3 yeast, Sake meter value +6 A juicy sake with a firm sweetness. A little pineapple 🍍. The most delicious 😋. Junmai Daiginjo Usu Yamadanishiki, Polishing ratio 40%, EK-1 yeast, Sake meter value +8 It was refreshing and gorgeous, but delicious! It had a berry-like flavor. All of the breweries here have high sake strength, but it didn't feel too spicy.
