Souvenirs from Shinshin SY Among several souvenirs, I chose this one intuitively by looking at the label. He brought three four-packs of sake as a souvenir, which is a generous gesture for a business traveler who travels all over the country. I would never have been able to do such a thing with my own pocketbook. When I pour it into the cup, it is more yellow than I expected! Is this a matured type? The aroma is slightly fruity, but has a bitter, mature aroma. The mouthfeel is crisp and dry, with a light sweetness and bitterness, and a moderate umami, but the maturing aroma in the aftertaste is unique. The light sourness and bitterness in the aftertaste are quite a tricky thing to pull off. This strange taste is not one of my favorites, but it is something that makes me want to drink it again. It reminds me of that strange feeling I had in junior high school when I used to prank cigarettes behind my back. It's a treat!

The aroma is subdued. When you drink it, it gives an impression of sweetness, but you can immediately feel the acidity and Holder A bitter taste that tingles afterwards? Astringency? Junmai Unfiltered Nama-shu from Kikusen in Fukaya, Saitama Prefecture. I have an image of Kikusen as a standard Saitama sake brewery, but in a good way, The taste is smooth and has a raw, unfiltered character, but in a good sense, it has a sake-like, sake-like, and austere taste that is typical of Musashikuni and Saitama Prefecture sake. It is served with stir-fried udo (udo radish) with walnuts and pork ribs from Niigata Prefecture.

This is #Kikuizumi Junmai Unfiltered Nama Sake from #Takizawa Shuzo in Fukaya City, Saitama Prefecture. The aroma is mild and banana-like. The palate is full of rice flavor and richness. The slight bitterness and pungent spiciness finish it off. I had it cold tonight, but it would definitely be delicious warmed up. It is my favorite type of sake.

New Year's Day drinks 🍶 Local sake at wife's parents' house It is a super minor brewery from a national perspective, but it was tasty in its own way. The osechi was procured at a certain department store and supervised by a certain famous Italian restaurant. Hmmm...not so good 😂.

Very beautiful, no strange mixtures, a sparkling sake with a fizzy feeling, where the depth of rice and koji coexist nicely with a refreshing aroma. The level is straight up high, just because it is expensive.
