It was hard to ask them to let me take a picture because they looked so busy, so no picture. The aroma is classic Japanese sake. When you drink it, it is quite refreshing and slightly sweet. I got a bottle of summer sake "Kashoku", which is rarely seen even in my hometown, because there was some left at the liquor store! The mouthfeel is sweet with a refreshing acidity, and the mellow aroma lingers until the end. It seems that more emphasis is placed on the mellow aroma than on the refreshing taste! I bought this Wakaba unfiltered sake in the summer and felt it was still young, so I let it sleep in the closet. It has a good balance of flavor, with the punch of unfiltered sake, but without losing the simple country feel of Wakaba. I put it in the closet again, but it was good enough. It's not Wakaba, but Higuchi Shinyo, a triple axel that is anything but rustic! The ROC is still very difficult, but I hope the Japanese will do their best to get on the podium!

Closing out the drinks we had last weekend 😆. Smell good 😌. The Mikotsuru was quite rich and sweet, so I felt a lot of sourness when I took a sip 😳. The more I drank, the more umami and the sourness and aliveness were also good 👍 I can feel the strong aroma of the barrels! Is this a dry wine? and Nobby Well, I guess it's umakuchi. It is labeled 18 degrees, but you don't feel it. I thought it would have been better if it was warmed up to lukewarm 🤔 I thought so later, but I finished it before I realized it 😆. Tonight, I'm opening a bottle of the first bottle of Masamune instrument for the weekend dinner because it's so good it's about to run out 💁. Shikishima Light Nigori Nama Sake 2022BY Back on the nigori road a bit, but again it's almost a year old 😅. When I opened the bottle, I could hear the gas escaping with a nice sound. The aroma is mainly chemically aromatic, with a hint of greffle skin and a little bit of maturity. The mouthfeel changes from sourness and citrus bitterness to bitterness, umami, and spiciness. The alcohol content is 18%, so it has quite a punch, but the sweetness and umami from the aging process gives the impression that it is more rounded. It's good that the lees are so cloudy and the umami and richness is so much better 😊.

Today is Valentine's Day!👩❤️👨 This Sake paired very well with the filet mignon I prepared for my wife. There is a full mouth feel with umami. There is a light smoke flavor and wood. The aftertaste is short.
I bought it because the production date was a year ago and it was priced at 1,000 yen. It is said to be a sake made for meat dishes like steak, but first I tried it by itself. There was no cloying taste, and the taste was pure and not particularly pretentious. The sweetness tends to be hidden, and perhaps because of the high alcohol content, it tastes a bit muddy afterwards. If you drink it slowly, you can taste the umami of the rice, and it is quite a good sake. However, it is a bit strong on its own, so it is best to drink it with the sweetness of fat from grilled meat.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
