Nagano Ueda Railway Journey🚃Day 3 From Ueda, take the Ueda Dentetsu Bessho Line🚃 to Bessho Onsen (Bessho Hot Springs) ♨️ Lunch at the diner that was reflected in the setting of the 18th film Otoko wa Tsuraiyo. The aroma of the food was very strong. But it is sweet and gentle, not harsh. It has just the right amount of maturity. Goes well with Nozawana. It softens the salty taste of Nozawana. Sake comparison at home! We chose 3 kinds of sake from "Fukumitsuya", a long-established sake brewery in Kanazawa. Fukumasa Munune Junmai Dry, Nama Zume. This was the first sake made with black malted rice. I felt a bit salty, but I wondered if this was the richness found in sake made with "black koji"? Wind, Water, Man, Junmai 9 It is a junmai sake with an alcohol content of 9 degrees Celsius and a refreshing taste. I would like to drink it with pasta or Italian food! Fukumaso Sake: Hyoketsu Nama-Shu Dry With a sake alcohol content of +10%, it has a very strong sake taste! I would like to drink it with a salty meal and sip it while neutralizing the taste. It was interesting to compare the different types of sake and to see the difference between them. ☺️

Light and sweet. The sweetness reminds me of bubble gum with the flavor of apple. The aftertaste is clean, short and slightly dry. Very enjoyable to drink on a warm evening.
I had it lukewarm 🍶. I had not had much sake from Aomori, so I was looking forward to it. It is easy to drink without any peculiarities. I got the impression that it is a sake that can be easily matched with any meal, Japanese or Western 😃.

Aizu Shuzo's Aizu Ginjo Nama Shu Arabashiri. The initial aroma is just a hint of sweetness, but once you take a sip, a soft sweetness and bitterness spreads. We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.

The rice used is Gohyakumangoku and Koshibuki. My first impression was "It's sweet. ❣️ I felt that "Kosu-Mori" was also quite sweet for me, but it seemed more profound than "Kosu-Mori". It is like licking a muscat candy. The finish, however, is crisp with just the right amount of bitterness, so the sweetness doesn't linger and it feels refreshing. It is a delicious drink, but I think it is suitable for different situations.
