In the latter half, the sourness comes from the umami. Then it finishes with a kick. After swallowing, the chest is chilled. If you combine it with pear Hmm? It was a bit salty and sour! When I combined it with Satoya's "Tamayura"... It's so good 😘! I loved this pairing 💕 By the way, "Tamayura" is... A famous Yamagata confectionary "Noshibai" made with white bean paste and agar, topped with Japanese raw chocolate. Very delicious 🥰. For lunch, I had a quick ramen (ramen).

The second drink at Sugitama is a cedar ball with the name of the restaurant Fittingly, the cedar ball is a cruel octopus sausage! And the adults-only potato salad✨! Tasted here also at Hankyu Department Store. Junmai Ginjo-shu made with Kuzuryu. It is a refreshingly dry sake, but has a sweet and fruity taste. This time I bought a bottle of unfiltered raw sake made with Jinryoku.

Tasted at Umeda Hankyu Department Store. The rice was said to be Gohyakumangoku. The quality of the sake is clean and refreshing for hiyaoroshi. It is easy to drink without a sense of maturity. As the person in charge said, it is a quiet type of sake, so I think it is suitable for a mealtime drink.

It looks like all of them use locally grown rice, as did the two types of Kitanosho I posted the other day. It seems that only Ryu-ryoku and Koko use Jinryoku all the time. I'm sure there are other places like Okura that use it for single use. When I tasted it, my impression was that it was quite sweet and the second half was heavy, but it was smoky and the flavor of the rice came through with a bang. It has a strong bitterness at the end. It is not the type of sake I would drink on its own, so I will have to wait and see. I don't think it should be chilled too much. If you like Shimane or Tottori area sake, this would be good for you. I think it has a quality of sake that would not be affected by letting it sit for a while. There are glimpses of sweetness and a fruity atmosphere, but I wonder if it's basically more of a classic. Is it a multi-faceted, multi-personality sake?
