Next up was the Ittiki Senzan Comet Nama-no-Hara Sake. The only sake from Gifu that I know of is Ikki Senzan, so I thought I'd give it a try. It was a brand that had just been opened. When I opened the bottle and poured it, the aroma was freshly cooked and fluffy, like rice cakes or rice. It is a four-step glutinous rice brewing process. The mouthfeel is smooth like Gunma sake, but gradually a gentle and deep sweetness like sugar or spuds spreads gradually. When heated, it has a full-bodied, rice-like flavor. The sweetness is not too strong, but rather relaxing. Perfect for enjoying in the colder months. The sweetness itself is more subdued than the normal type, but on the other hand, you can fully enjoy the cleanliness that is typical of Gunma sake, which is a good balance!

As the summer is drawing to a close (the heat is still on), I opened a bottle of "Katsuragawa" sake on the rocks, which I was looking forward to drinking again this year! And the back of the bottle is falling apart due to condensation again😇. When we opened the bottle and poured it, the aroma was sweet and fluffy, typical of "Katsuragawa". It is a bit sour and comes in through the nose as if it is cold on the rocks. The mouthfeel has a pettiness by default, but on the rocks it is smooth and silky. It has a fluffy aroma like sweet rice crackers and a syrupy sweetness of shaved ice. As the ice melts, it becomes lighter and more enjoyable ✨. The lingering finish has a slightly tangy, spicy acidity and a tropical fruitiness, and the smart finish keeps the saké going! While listening to the chirping of autumn insects 🍶. 7/10 Assemblage 5 with a "I can't write anymore" feeling. So this means I drank from 2 to 5. The taste is definitely different from 3 and 4, but the image of complexity with layers of flavor remains the same. Tonight, I'm posting my second bottle, this one I've been letting go for about 2 years to contrast with the first (Miyazumi Junmai Nigori Nama) 🍶. Actually, I bought it at the same time as the previous Junmai, but when I drank the Junmai, I took it for granted that this was a sake that should be aged for a long time 😪💤 and it has been in the bottle for a long time until now 😌. The aroma is grain-like, or Western liquor-like, or mature aroma, and the smell alone is enough to make you feel drunk. 😵💫 I think it's better to drink it at room temperature or warmed than chilled because the initial smell will disappear. We used Go To to Echigo Yuzawa. So_1F3D4 brand and Naebayama brand that I don't remember seeing in Tokyo to match the local cuisine of the hotel. Junmai-Ginjo sake with Junmai-Ginjo specifications. The gentle aroma, the sweetness, and the refreshing finish give me the impression that this is a "Niigata's local sake" as I have always imagined it to be. In terms of Niigata brands that you can buy in Tokyo, I'd say it's similar to the Junmai Ginjo specs of Tsurueri or Kubota. If I tasted it, I'd never be able to understand it myself... After all, coming on a trip and pairing it with local food is the best part of local sake 👍.
