At Kitayasu Brewery, we enjoyed five different kinds of sake. Among them, I liked the "Iyari" pure rice sake! It has an acidity that is typical of a sake yeast yeast yeast yeast on the palate. Then, it was complex yet spreading on the palate, The harmonious umami, bitterness, and acidity are delicious. ✨️ The lingering aroma through the nose is also full and long. I enjoyed it very much☺. New saury at the supermarket, Sake stores are starting to sell hiya-otoshi (freshly grated sake). I found my favorite brand "Yokoyama" hiyaoroshi and bought it immediately! I bought a large saury at the supermarket and set it up: ✨️ The aroma is slightly muscat-like, but more melon and melon-like. It has a smooth, winey, fruity mouthfeel that is typical of Yokoyama☺. And this is where the hiyaoroshi really comes into its own. The flavor that seems to rush out of it spreads! The full-bodied sweetness like dried fruits and a slight alcohol taste that leaves the nose and softens. The soft, mellow aroma with a hint of alcohol that escapes through the nose is wonderful. ✨️ It goes perfectly with the plump and oily new saury, which refreshes the palate and adds even more depth of flavor. ☺️

Apple Carp 🍎 with red on the carp The aroma and taste are sweet and sour, reminiscent of a refreshing apple, just as the name suggests! The alcohol content is a low 13%, and the mouthfeel is smooth and solid, but it goes down easy ☺. The sweetness of glutinous rice, which is typical of Seimasamune, is only slightly noticeable in the aftertaste when the bottle is opened, but as the days go by, you can clearly taste it as the acidity becomes gentler ✨. For me, I especially enjoyed the gradation between the refreshing acidity and the glutinous rice sweetness that gradually spreads on the third and fourth days after opening.

Visited Gunma during Obon vacation After sightseeing at Mt. Akagi and Mt. Haruna, we visited the Makino Sake Brewery and purchased some of the sake recommended by the brewer. The clear red color from the yeast and the label reminded me of a rosé wine 🍷. It reminds me of a rosé wine! The aroma is moderate, with a hint of sweetness and acidity from the rice, It is easy to drink, with a thick mouthfeel and fine bubbles of gas. The color is also due to the honeyed sweetness of strawberries! It is a true dessert sake, and if you try it with vanilla ice cream, you may enjoy it even more with its creaminess. ✨️

Obon We are drinking happily in a group every day... Family picked up "Yamamoto" in Akita Sunshine yellow for summer 🌻. Yamahai Junmai Ginjo strongly recommended to be drunk chilled! The aroma is rich and slightly floral with a hint of yogurt. In the mouth, it is easy to drink with very clean acidity. Umami, sourness, and bitterness develop in the latter half of the bottle. The acidity and the flavor in the latter half of the bottle complement the meal without interfering with each other. ✨️ It went very well with side dishes such as simmered motsu (pork cutlet) and bamboo shoots simmered in Tosa sauce☺.

The aroma is gorgeous, sweet and sour, reminiscent of pineapple🍍, and I am always amazed that such an aroma can be produced in sake. It has a slightly gassy mouthfeel. The taste has a very fruity aroma while it feels dry. The acidity and tangy sharpness make it an interesting sake that can also be enjoyed as a food sake. ✨️

I was curious about this brand, "Yuki no Mayu" from Niigata. It is a rare sake brewed in a single-stage brewing process, so I was wondering if it was sweet and sour 🤔. I was imagining how it would taste 🤔. Refreshing sweet yogurt aroma. From the gaseous mouthfeel, the sweet and sour taste with a hint of creaminess lingers on the nose. Aftertaste: a good taste of rice and bitterness that goes through to the nose! Although the alcohol content is a little low at 14 degrees, it is surprisingly strong and gives a satisfying depth to the aftertaste. The taste was somewhat distant after opening, but after letting it sit overnight, it became a very enjoyable sake with a strong aftertaste, especially in the latter half of the bottle ✨.

Purchased because of the never-before-seen label of Ryuryoku. This sake commemorates the year 2024, the 88th year since Yamada-Nishiki was created (Yonenju). Interesting that it is brewed with low-polished Yamadanishiki from the special A district of Hyogo Prefecture 🤔. The mouthfeel is gradually dense. Not much of a cloying taste, but rather a clean impression. It is dry with acidity and sharpness. The low milled rice is evident in the aftertaste, The full-bodied umami flavor fills the mouth. The mellow, grain-like aroma that comes through the nose is very elegant and enjoyable without being peculiar.
