Oragami junmai sake made from Yamadanishiki and Gohyakumangoku grapes. The aroma and taste have a fruity 🍎 flavor. At Miyazumi Meizumi brewery, famous for "Keiraku", we were able to sample and compare three different kinds of sake☺. Junmai Sake Fresh aroma of melon. Umami and sour taste. It has a dry aftertaste and is easy to drink. Junmai Ginjo It has a gorgeous aroma of melon, melon and citrus fruits with a sweet and sour taste! It has a mildly sweet, umami taste and is very drinkable. Junmai Daiginjo, low-temperature long-term storage It has a sweet aroma like honey. The first thing that hits the palate is a sweet and sour taste reminiscent of marmalade jam, which is very impressive. ✨️ The taste is very much like sake, with a lot of alcohol and richness.

Happy New Year 🎍. I sincerely hope that everyone who loves sake can enjoy drinking it in good health and taste this year as well. My first post of the new year is "Kibotsuru" from Saga! This is a new sake with a label that looks like it should be drunk on New Year's Day: ✨️ The rice used is Yamadanishiki. Polishing ratio is 68% for both koji and kake Sweet and sour aroma reminiscent of 🍌. Slightly gassy mouthfeel, The taste is fresh and new sake-like, but the sweet and sour flavor is deep, mild, firm, and satisfying☺. Good aroma through the nose and delicious aftertaste with a hint of umami!

We wanted to finish the year with a good sake. Takasago" by Kiyamasa Shuzo of Nabari City, which is also famous for Jikin! Yamadanishiki Junmai Daiginjo with a 45% polished rice ratio! The aroma is modest and 🍇-like. The mouthfeel is slightly gaseous and has a refreshing impression with a touch of acidity. The depth of umami and silky richness is very atmospheric 😌 The bitterness in the aftertaste also adds a nice touch. ✨️ I paired it with meat and egg dishes and enjoyed the synergy of the flavors. It is a good priced sake, but it is very easy to drink and you can drink it easily.

Today's new sake is "Hiran" from Hirado, Nagasaki! Happy New Born🎉! I was thinking of drinking it on New Year's because of its appearance, but I couldn't resist and opened the bottle 🫧. My first Oita sake was "Chiebijin"! When I was in college, the manager of a restaurant where I worked part-time said it was delicious, and I finally found a brand I've always wanted to try someday: ✨️ This is a new sake, freshly squeezed without filtration! Junmai sake with a rice polishing ratio of 70%! The aroma is a bit grainy and fruity like white grapes, just like the bottle looks like wine. The gaseous mouthfeel is followed by a smooth, glossy sweetness. It is very easy to drink and enjoyable, with no unpleasant taste and no sticky sweetness that makes drinking tired 😌.

It's been a long time since I had "Mimurosugi" from Miwa! When I was in Kansai, I used to go to the directly-managed store to buy "Mimorosugi" in kanji, but now it is far away and I am glad to be able to drink it since it is a sake that I don't come across very often☺. Romain series "Dio Avita". Sake rice is Yamadanishiki and the alcohol content is a little low (13%). The aroma is cool and light with a hint of apple. The low alcohol content makes it very easy to drink and has a fresh sweet taste. But it is not thin at all, especially the juicy flavor and aroma that comes afterwards made me groan 😲.

Ni-Utsuri" 🐰🐰 from Maruishi Brewery in Okazaki City, Japan. I chose the raw junmai ginjo this time because it was so delicious when I had the fire-aged junmai sake made of Yamadanishiki! Yamada-Nishiki, 55% polished rice ratio Junmai-Ginjo! Aroma: Fruity and sweet, with a strong, fruity aroma. Light and gaseous. The sweetness and umami that fits in with the plumpness and moistness makes it delicious. ✨️ The aftertaste is surprisingly refreshing, and the moderate bitterness and acidity will increase your desire for another glass. In fact, it doesn't stop 🌀 The fruity aroma that comes through to the nose and the alcohol taste is very satisfying, and anyway, it was a good sake that struck a chord with me. ☺️

Drinking Mie Sake at an Izakaya in Tsu Special Junmai made with Omachi from "Tamitsu Pale amber color The aroma and the moment it enters the mouth, it is very ripe banana🍌! The overall impression is dry with thick sweetness, umami and acidity, and a sharpness in the second half. It was a convincing Omachi sake. The tempura was crispy, the koromo was crunchy, the kashiwa was soft and juicy, and the sharpness of the sake and the fat were a perfect match☺.
