The brand I was interested in, "Hiran" from Hirado, Nagasaki! A summer sake made from the oldest sake brewery in Japan 💦. The aroma is of apples and bananas in the distance. It has a gassy mouthfeel and is refreshingly sweet and sour and silky at the same time. ✨️ The closer it gets to room temperature, the richer it becomes and the more lactic acidic it becomes, the more enjoyable it is. It is a summer sake that disappears quickly at the end, so it is very delicious.

Sake from Yoshino, Nara Prefecture I knew this sake brewery as a mizu-hashiro sake brewer, but this time I drank a recently released light nigori sake. The aroma is of lactic acid beverage type acidity, with a strong fruity flavor. The mild taste is followed by alcohol and a firm umami taste! After that, the lingering taste of alcohol, robust umami, and bitterness makes it a perfect drink!

Purchased from Koyama Shoten, Tama City, Tokyo This is my first Kumamoto sake, It is the first Kumamoto sake and we were very interested in this brand. Sake made from Ni-no-no-shochu and Yamada-Nishiki, with a raw yeast structure. It has a lactic acid aroma like calpis, It has a lactic acidic aroma like Calpis, but with a slightly carbonated and refreshing taste. ✨️ The refreshing sweet and sourness spreads, and the silky flavor is very delicious in the latter half of the bottle☺. Kiso Fukushima Sake I remember tasting and buying another brand "Nakanori-san" last summer during a brewery tour and it was very tasty☺. This time we had "Zenkichi". Junmai Ginjo made with Nagano D yeast and Yamae Nishiki rice. The aroma is apple-like with a hint of acidity 🍎. The fruity, sweet and sour taste spreads from the calm mouthfeel! The second half of the bottle is sharp and crisp, with the umami of the rice quickly disappearing. Purchased because of the never-before-seen label of Ryuryoku. This sake commemorates the year 2024, the 88th year since Yamada-Nishiki was created (Yonenju). Interesting that it is brewed with low-polished Yamadanishiki from the special A district of Hyogo Prefecture 🤔. The mouthfeel is gradually dense. Not much of a cloying taste, but rather a clean impression. It is dry with acidity and sharpness. The low milled rice is evident in the aftertaste, The full-bodied umami flavor fills the mouth. The mellow, grain-like aroma that comes through the nose is very elegant and enjoyable without being peculiar.

This time it was a summer sake Snow Fantasy in Summer When you pour it into a glass, you can see the fine white bubbles. The lactic sweet and sour taste surrounded by a gentle richness is just so easy to drink and delicious. ✨️ Compared to the Cotton Candy I have had before, the acidity is more pronounced, and the aftertaste is mildly sweet, but it disappears quickly, leaving you wanting to drink the next one!

Saku Sightseeing Part 2 After purchasing Kame-no-umi, we went to Usuda station and walked a little to Saku-no-Hana Sake Brewery. I bought this sake, which was recommended as a refreshing sake in this hot season! The rice used was Hitogokochi, and the yeast was Nagano D yeast. The aroma is fruity, with a hint of melon or muscat. It has a slightly chili pepper flavor with a sweet mouthfeel! However, the bitterness and acidity in the latter half of the bottle make it easy to drink without feeling too sweet. ✨️ I enjoyed it because it is a sake that can be enjoyed as a mealtime sake. Chikuma River flows nearby, and on the other side of the river is a strange rocket-shaped observatory 🚀.

Saku Sightseeing Part 1 The weather was so nice that I wondered where the rainy season had gone (too nice 💦), so I toured shrines, temples, and warehouses. The first Kame no Umi was a summer sake called Semishigure. Junmai Ginjo-shu made from Hitogokochi with a slightly low alcohol content of 13 degrees. I've heard a lot about Ueda's Yamazan recently. I drank a little Hitogokochi light nigori a while ago, and this is the second time I've had it. Junmai Ginjyo unfiltered unpasteurized sake made with Yamae-Nishiki. The aroma is like tropical fruit with a mellow sweetness. The mouthfeel is very sharp and pleasantly gaseous and refreshing, just like the Yamazan I had before. However, the Yamae-Nishiki this time has a characteristic full-bodied rice flavor in the aftertaste, which is wonderful! The acidity and bitterness accentuate and satisfy. ✨️ I felt something that cannot be described by just an easy drinking sake☺.
