A brand I was interested in! Sogen", Suzu City, Ishikawa Prefecture Special Junmai made from Yamadanishiki produced in Hyogo Prefecture. It is easy to drink with a smooth, square mouthfeel. The full-bodied rice flavor spreads slowly. The acidity and sharpness in the second half make it very pleasant to drink. It was a beautiful sake with a lot of flavor and beauty ✨.

My first Fukushima sake was Kunigon! The owner of the sake store recommended it, and I bought the last bottle they had. The aroma is rich and banana🍌. There is a tingle in the nose when you put it in your mouth. On the tongue, it has the lively impression of nama sake! The taste is a delicious one that makes you want to meditate and nod your head as the deep umami spreads slowly. ✨️ The acidity and the sharpness at the end make it possible to savor many glasses of sake without feeling clingy. The acidity is enhanced when paired with a meal, making it very enjoyable.

Purchased at a direct store of the brewery on 5/5 during Yamanashi sightseeing (Fujiyoshida and Kawaguchiko) Special Junmai "Hokuroku The aroma is faintly of rice and alcohol. First impression is lightness and softness on the palate. The taste is quite firm and dry, with a hint of alcohol on the nose. It has a sharpness that is just right for a mid-meal drink! There was also a tasting at the brewery, and the special junmai sake that I bought this time was also available. This one had a richer rice flavor and really hit me hard. ⚡️ There were many other sake tastings as well, and many of them were easy to drink and full of flavor.

Purchased at a brewery in Hokuto City on 4/28 This is my first time to post a Yamanashi sake, but the second time to drink Shichiken itself! This time it was the Junmai Ginjo "Takayasu" from the seven types of Namazake sake named "Takebayashi no Shichiken" available only at the direct sales store. The lively mouthfeel, which is typical of nama-shu, is fruity and has a refreshing sweet and sour taste. ✨️ The second half has a calm impression with acidity and a slight bitterness, and the smooth texture on the tongue makes it easy to drink with a good aftertaste. The introduction recommended it as a food sake, and it was indeed enjoyable, with moderate acidity and sweetness, but with a calm and refreshing aftertaste!

Purchased at a brewery in Suwa on 4/20 Junmai Ginjo "Suwa" with water, rice (Miyamanishiki) and yeast all produced in Suwa. In addition, this time, a limited quantity of recently released unfiltered, unpasteurized sake ✨️ The mouthfeel is smooth and thick, with a hint of a chili sensation. It has an exquisite acidity, a soft sweetness of rice, and a satisfying taste that is very delicious! The lingering aroma on the nose, which is unique to Miyamanishiki, is superb☺. I also tasted a fire-aged version at the brewery, and I felt that the unfiltered, unpasteurized sake was best for its liveliness and freshness, while the fire-aged version was best for the lingering aftertaste. Both are delicious. ✨️ If you like Miyamanishiki, I highly recommend Honkin!

4/16 at Takato, Ina City Purchased at the old sake brewery, which is open only during the cherry blossom season at Takato Castle. It was a valuable experience to see the inside of the historic brewery. Fairly sweet sake with a sake degree of -17 degrees. Mellow and fruity sweetness and aroma, but not at all cloying, with a hint of acidity that settles nicely at the end, which I quite liked ✨. It is luxurious, but you will not get tired of drinking it and you will be able to enjoy it.

I went to the "Great Silk Road Exhibition" at the Kyoto Culture Museum, which ends tomorrow! 1/6 Purchased at Ootsuki Sake Shop in Matsumoto City I went to Suwa on my New Year's visit, but they were not open, and I really wanted to drink it, so I bought it in Matsumoto. Miyamanishiki Fire-brewed Open the bottle with a pop! The aroma is sweet pineapple 🍍. It has a pleasant gasiness and a mildly sweet taste. It is not only sweet, but also very tasty with a fine texture and a rich aftertaste! The aroma of the sweetness of koji on the nose makes it a beautiful sake that can be enjoyed all the way through. ✨️

12/28 at Sake no Negoroku, Iwade-city, Wakayama Tasted and bought the ones I liked. It was quite yellowish in the tasting, It had a mellow sweetness. But when opened, it had a little bit of color. The aroma is sweet with a hint of koji. The taste is light and dry, with a lingering aftertaste that is full of the umami of a sake yeast stock. ✨️ On the third day, both the aroma and taste became more mellow and sweet. It was an interesting sake to enjoy the process.

2025 New Year Suwa Gokura Tour (5) Masumi Junmai Daiginjo Yamahana I have drunk it before. The acidity and umami are very elegant. Special order Kinju. A blended sake. It has an initial acidity, followed by a deep umami and bitterness that makes it a very good mid-meal sake. Junmai Ginjo Hakuju I have had this sake before. It is a low-alcohol sake with a soft sweetness that gives a gentle impression. Junmai Ginjyo Nama Harajuku Arabashiri Smooth and fruity, it is very light despite its high alcohol content, and the honey-like sweetness is very delicious! It was the highlight of my visit! We were satisfied to be able to sample a variety of fresh and flavorful new sakes during our winter visit. ✨️

2025 New Year Suwa Gokura Tour (4) Yokobue Select (1) to (5) from the list of tastings Ginjo-nama sake Hatsutsukuri Great flavor, maybe close to shochu. Low alcohol ginjo-shu. It is said to be a delicious low-alcohol sake for summer, but it was not available last summer, so this is the first time I'm drinking it here. It is light, very soft, sweet and easy to drink. Indeed, I would like to drink it casually in summer! Bottle-fermented nigori sake This nigori sake has a strong honey-like sweetness. The bubbles and acidity make it easy to drink. Junmai Ginjo Yokobue Yamae Nishiki The taste is gentle and soft with umami. The aroma is very nice through the nose and you can enjoy the lingering taste. Sweet Junmai Sake Yokobue It has a thick, syrupy mouthfeel, but it is not as sweet as expected. The acidity makes it easy to drink and the mellow flavor is strong and lingers in the aftertaste. I like it a lot.
