Today's new sake is "Hiran" from Hirado, Nagasaki! Happy New Born🎉! I was thinking of drinking it on New Year's because of its appearance, but I couldn't resist and opened the bottle 🫧. It's a light nigori unfiltered unpasteurized sake! The aroma is creamy and fruity like grapefruit 😌. The mouthfeel is very pleasant with fine bubbles as it touches the tongue! The sweet and sour taste is accompanied by an indescribable mild richness that is very delicious. ✨️ The aftertaste is also moist and delicious, refreshing yet satisfying ☺.

My first Oita sake was "Chiebijin"! When I was in college, the manager of a restaurant where I worked part-time said it was delicious, and I finally found a brand I've always wanted to try someday: ✨️ This is a new sake, freshly squeezed without filtration! Junmai sake with a rice polishing ratio of 70%! The aroma is a bit grainy and fruity like white grapes, just like the bottle looks like wine. The gaseous mouthfeel is followed by a smooth, glossy sweetness. It is very easy to drink and enjoyable, with no unpleasant taste and no sticky sweetness that makes drinking tired 😌.

The brand name I was interested in: "Morishima", Hitachi City, Ibaraki Prefecture! New Sake Junmai Ginjo Yamadanishiki ✨️ Modest but fruity aroma of 🍇. Soft umami and sweetness spread with a light gassy sensation. The silky, full flavor that comes after swallowing, and the bitterness that sticks to the tongue is addictive 😌. On the second day, the fruity aroma and flavor are stronger! The flavor and bitterness accent is exquisite ☺.

It's been a long time since I had "Mimurosugi" from Miwa! When I was in Kansai, I used to go to the directly-managed store to buy "Mimorosugi" in kanji, but now it is far away and I am glad to be able to drink it since it is a sake that I don't come across very often☺. Romain series "Dio Avita". Sake rice is Yamadanishiki and the alcohol content is a little low (13%). The aroma is cool and light with a hint of apple. The low alcohol content makes it very easy to drink and has a fresh sweet taste. But it is not thin at all, especially the juicy flavor and aroma that comes afterwards made me groan 😲.

The long-awaited new sake from Yokoyama: ✨️ The first time I drank it was also the first time I drank SILVER7's raw sake, and I am delighted to be able to drink it again this year! It has an elegant sweet aroma like strawberry, It has a gaseous and refreshing mouthfeel with a full sweetness and umami that is truly wonderful ☺. Ni-Utsuri" 🐰🐰 from Maruishi Brewery in Okazaki City, Japan. I chose the raw junmai ginjo this time because it was so delicious when I had the fire-aged junmai sake made of Yamadanishiki! Yamada-Nishiki, 55% polished rice ratio Junmai-Ginjo! Aroma: Fruity and sweet, with a strong, fruity aroma. Light and gaseous. The sweetness and umami that fits in with the plumpness and moistness makes it delicious. ✨️ The aftertaste is surprisingly refreshing, and the moderate bitterness and acidity will increase your desire for another glass. In fact, it doesn't stop 🌀 The fruity aroma that comes through to the nose and the alcohol taste is very satisfying, and anyway, it was a good sake that struck a chord with me. ☺️

Drinking Mie Sake at Izakaya (Japanese-style pubs) in Tsu, the 2nd cup Dry Junmai Taki Suiryu (Hayase) from Takihantu The aroma is melon with melon-like sweetness. Cool and refreshing on the palate. The taste is dry, sharp and tingling on the tongue. ⚡️ On the other hand, it has a nice fruity flavor and is easy to drink. The udon noodles with bonito broth and soft noodles will soak up the cold night.

Drinking Mie Sake at an Izakaya in Tsu Special Junmai made with Omachi from "Tamitsu Pale amber color The aroma and the moment it enters the mouth, it is very ripe banana🍌! The overall impression is dry with thick sweetness, umami and acidity, and a sharpness in the second half. It was a convincing Omachi sake. The tempura was crispy, the koromo was crunchy, the kashiwa was soft and juicy, and the sharpness of the sake and the fat were a perfect match☺.

Once in a lifetime visit to Ise (3rd time) I was blessed with good weather and was able to walk from the outer shrine to the inner shrine to greet the gods, and I was also able to eat a beef bowl at Tonputsu, which I visit almost every time I come to Ise! I bought sake to take home at Morishita Sake Shop. We bought some sake to take home at Morishita Sake Shop and had a three-drink comparison of ZAKU near Ise-shi Station☺. Junmai Gen no Tomo! The aroma is green apple. The mouthfeel is firm and umami, with some bitterness and acidity afterwards. The taste is robust, but the fresh apple flavor makes it easy to drink, yet satisfying. Junmai Ginjo Sano-no-Tomo Sweeter aroma with a hint of honey than Junmai. The mouthfeel is smooth, and the taste is moist and fruity with a sweet and sour flavor. It has a lingering sourness and minerality. Junmai Ginjo Z The sweet and sour taste of lactic acid beverage is different from that of Kanade-no-tomo! The aftertaste is interesting with a little bitterness and a full-bodied umami flavor.

My favorite Ona opening! Special Junmai Ichikanzukuri made with Nasu Gohyakumangoku The aroma and flavor are clean and melon-like. It is very clean and goes down the throat without any resistance. ✨️ The lingering taste is accented by a slight bitterness and a tangy sensation on the tongue that is typical of Gohyakumangoku. The last time I had the super-harsh junmai, but anyway, the dry Ona goes well with rice as a mid-meal sake☺. The cycle of eating and drinking never stops 🌀 The super-harsh one was characterized by a lingering umami taste, but this one seemed easy to drink anyway!

Purchased at Asano Sake Shop YOKOHAMA We drank the bitter label at the store, but we had this new sake at home. Junmai Ginjo Hatsushibori made with Gohyakumangoku (five hundred million stone) ✨️ I love the fresh apple aroma, and as I thought about the Bitter Label, I love the clear and beautiful aroma of Murasaki Uchu☺. Light gassy sensation in the mouth. The sweet and acidic taste is followed by a smooth umami taste that gradually becomes familiar. The lingering crisp sensation is refreshing! It is getting colder and colder, so it is good to warm up sake, but new sake is also being pressed one after another, so you can't miss it!

Special junmai bitter label with coffee bean pattern ☕ It has a very nice and calm fruity aroma 😌It is very clean and refreshing to drink and gives a very beautiful impression. ✨️ When the sake is still on the tongue, there is a lingering umami and acidity, and when it is gone, the bitterness suddenly arrives!
