Fresh rice aroma.
Sweet and gassy on the palate, with a sweetness that fills the mouth
Not too sweet, but a refreshing sweetness
Good balance of sourness and sweetness
Mellow and juicy sake
Kiso Fukushima Sake
I remember tasting and buying another brand "Nakanori-san" last summer during a brewery tour and it was very tasty☺.
This time we had "Zenkichi".
Junmai Ginjo made with Nagano D yeast and Yamae Nishiki rice.
The aroma is apple-like with a hint of acidity 🍎.
The fruity, sweet and sour taste spreads from the calm mouthfeel!
The second half of the bottle is sharp and crisp, with the umami of the rice quickly disappearing.
The more it is kept at room temperature, the more slowly the umami and bitterness can be felt and the more satisfying it is!
The third Sei Masamune is a festive carp 🎆: ✨️
The lid flew off when I opened it! It's a very lively carp!
The aroma is a mildly sweet apple 🍎.
This is my first time to drink Junmai Ginjyo Seimasamune,
I have never had Junmai Ginjyo Seimasamune before, but I can feel the plump sweetness of the mochi rice more strongly from the flavor and aroma than from the taste!
It has a very fine texture, and the freshly-opened, shuffling texture on the tongue is very nice and refreshing ☺.
It is more refreshing and crisp than anything I've had before, and the ease of drinking makes it perfect for this time of year. ✨️
God's will (in Christianity)
Sourness due to slight effervescence. Sweet, but with a nice sharpness. I like it.
When paired with grilled bandits, the oil and saltiness are refreshingly washed away by the slight carbonation and overwritten by the sweetness, making for an excellent pairing.
This sake won first place at a rare event held at the end of August to select the best sake from Shinshu that goes well with sanzokuyaki. My prediction was wrong, but after drinking it again, I was convinced.
On a side note, I sometimes see people playing with AI concierge when I search for sake-no-wa, and I am one of them.

Today.
I bought a bottle of Daishinshu Junmai Daiginjyo at Sandozawa Sake Shop the other day.
I enjoyed a bottle of Daishinshu Selected Nakadori Yaehara Junmai Daiginjyo.
This sake features 100% Hitogochochi produced in Yaehara.
It is a rare sake among the Daishinshu series, which is sold at only 10 stores in Nagano Prefecture.
The aroma is fruity.
The taste is dry and mellow, and goes well with meat.
