It has a strong yogurt-like aroma.
But the mouthfeel is quite refreshing. It has a sweet taste, followed by a strong bitterness that tightens up the taste. It is more refreshing than when it was called "Brewing Forest".
Rice used: Gohyakumangoku, Koshibuki
Rice polishing ratio: 60% Alcohol level: 14
Slightly carbonated, with a delicious rice flavor, a moderate sweetness, and a fruity aroma like Japanese pear.
The last taste was pleasantly bitter, with a hint of shiso leaf? I could taste a little bitterness at the end and a hint of shiso leaves.
It seems to go well with dishes that make the most of the flavors of the ingredients 😊.
Naeba Shuzo, Naka-uonuma-gun, Niigata Prefecture - Yukinomayu Junmai Ginjo Namaishu
I came to Niigata Prefecture, so I went to the Pon Shukan to buy some sake.
I immediately decided on the elegant label in the refrigerated case.
It is a dry, refreshing sake with a strong acidity that you will never get tired of drinking.
Sake made with shochu "Yuki no Mayu" and sake "Naebayama" 🍶.
Citrusy aroma similar to mandarin 🍊
At first, sweetness is a little strong 😲.
Light and acidic 🎵.
Clear aftertaste👍️
I also got this sake that I saw yesterday when I went to the local supermarket to buy beer. I remembered seeing it at Sake-no-Wa and bought it immediately. I took a sip and found it to be sweet and sour. It is lightly cloudy. It is refreshing and easy to drink. My wife liked it too. It is good for an aperitif.
When I opened the bottle, I heard a slight sizzling sound. When I poured it, I found it to be lightly cloudy. When you drink it, the sweetness spreads. It is a light nigori, so it has a mellow and deep taste.
Cloudy white unpasteurized sake
Moderate aroma
The overall taste is gentle with a mild mouthfeel, soft acidity and sweetness. The aftertaste is light, leaving a refreshing sourness and grain aroma.
It is indeed sweet, but not as sweet as the sake level.
Alcohol 14%.
Sake degree -32
Acidity 3.2

Hotel Brewing Forest and its affiliated restaurants
At Ponshu Hotel Saimu.
This time I stayed at the hotel for a long time 😆.
I have been mistakenly thinking that this hotel was a hotel for a sake called "Kozo-Sumori",
I thought it was a hotel for that sake.
But it's the other way around 🤣.
I have just learned that it was the hotel's original sake called "brewing forest".
The sake we had as a toast for dinner was a gas based sake called "Kozusumori Junmai Ginjo".
The base of the sake was a junmai ginjo called "Kakusumori" and the gas pressure was increased.
The cocktail was based on sake brewed at the hotel. It was a perfect toast.
Also, when I checked in to Sleepy Hollow, I was given a welcome drink.
The welcome drink we received at check-in was
a cocktail of Sourisumori Junmai Ginjo with elderflower and lemon.
It is also refreshing and easy to drink like juice 😋.
The sake is very tasty on its own, but this time we were able to experience a new and different flavor.
