Sake made by Honda Shoten in Himeji City, Hyogo Prefecture. It is made from 100% Hyogo-Nishiki sake rice from Hyogo Prefecture. It was a deliciously dry sake with a refreshing taste and the umami of rice.

I finally got a taste that I am satisfied with! The taste is called "Kaminryu" 🐉.
I have no choice but to buy it!
The flavor is very smooth and refreshing, but it still has a little bit of a juiciness to it 👍.
The pull is like a Ryuriki-like mid-meal alcohol growth 🐲🐲.
It's simple and has a good amount of umami on it, so it's good!
After the 4th day, the alcohol is too assertive and changes like a typical sake😅.
I'll finish it on the 3rd day... or go to hot sake soon 🤔🍶.

The aroma was subdued, more like a rice aroma?
The taste was dry and refreshing, but later sweetness was felt.
There is a bit of bitterness in the aftertaste, but it is delicious.
I drank it with grapes, but it goes surprisingly well with grapes.

I've been curious about this for a long time and finally bought it.
I was also curious about Nocchi's post about it not being Ryuriki-like 😊.
A little bit of complexity, but just a hint of sweetness and minerality. Sharp and crisp.
Maybe it's true that it's not Ryuriki-like, but hmmm...

I still can't get into Ryuriki 🤔.
I enjoyed the active nigori and shinryoku though...
I thought it would be a good quality sake if it was aged.
I wish they'd release an ice-aged version of this like Yamadanishiki and Shinriki.

The label says it is brewed using the "sekimoto" method, but the website says it is brewed using the "moto" method, not the "kashiwa" method.

The rice is a new variety developed with the full cooperation of Honda Shoten, and so far only Honda Shoten uses it!
The taste is firm but crisp and dry, with a slight bitterness.
There is a hint of ginjo aroma, but the smell of alcohol is stronger.
