It is very light and refreshing on the palate, but the aftertaste is strange, with the taste of rice and a slight bitterness. That is not to say that the aftertaste is bad.
I have not encountered this type of sake very often, so it is an interesting sake.

Refreshing ✨ light mouthfeel. Dry with a bit of alcohol. Sharp. Kirei, refreshing.

At a favorite bar, I asked what kind of sake they had today. This one came out and I opened the bottle.
It is a sake with a richness, umami, and acidity that makes it ideal for heating up. But it was also rather refreshing cold, perhaps because of its sharpness.
Persimmons and sake go well together.
The persimmon was served to us as a complimentary drink, but it was a nice encounter.

It's a junmai daiginjo, but it's still very dry and refreshing. Delicious!
